176 calories and 2 net carbs per mini cheesecake - recipe makes (on average) 8 mini cheesecakes
Ingredients:
Base
30 g unsalted butter (1 ounce)
50 g almond flour (1.8 ounces)
Topping
225 g full-fat cream cheese (7.9 ounces)
1 free range/ organic egg
Juice of a whole lemon
55 g erythritol - you can also use xylitol (sugar substitutes) (1.9 ounces)
1 tsp almond extract
0.5 tsp salt
Mixed berries (blueberries, blackberries, raspberries) to dress

MINI PROTEIN CHEESECAKES- under 100 calories each, simple recipe, easy to make dessert recipe
Makes 8 (Approx. 86 calories, 8 carbs, 3 fat, 5 protein per mini. (Approx. 687cal, 65 carb, 25fat, 44 pro total)).
Ingredients:
Base:
-1/4c greek yogurt
-4oz light cream cheese
-0 cal sweetener (I used mok fruit) 2tbsp & 1tsp
-vanilla extract 2 & 1/4 tsp
-protein powder 1 scoop (I used gorilla mind vanilla which is 35.5g)
Mix in a bowl.
Crust:
-sugar free maple syrup (my brand required 7tsp, may vary by brand)
-4 graham crackers
Mix in separate bowl.
Prepare as 8 mini cheesecakes in a muffin/cupcake tin (or separate oven safe container of choice).
Bake at 350 for 10min then 225 for 5 min
Cool and enjoy!

Mini Mango Cheesecake Recipe by Food Fusion

Ingredients:
-Peek Freans Marie Biscuits 120g
-Makhan (Butter) melted 60g
-Dahi (Yogurt) 300g
-Aam (Mango) chunks 200g
-Whipping cream chilled 150ml
-Condensed milk 30ml
-Lemon juice 1 tsp
-Mango essence ¼ tsp
-Yellow food color ½ tsp or as required
-Gelatin powder 1 tbs
-Hot water 2 tbs or as required
Directions:
-Wrap one side of 2.5-inch round cheese molds with cling film,place them on a tray & set aside.
-In a chopper,add marie biscuits & chop well.
-Add butter & chop until well combined.
-Add 30g of crumbled mixture in cling film wrapped cheese molds & press firmly to set an even layer then refrigerate for 30 minutes.
-On a bowl,place a sieve & muslin cloth,add yogurt,tie the muslin cloth & hang it for 6-8 hours or until water completely drained out then take out strained yogurt in a bowl (approx. 100g) & set aside.
-In a blender jug,add mango,blend to make puree & set aside.
-In a bowl,add whipping cream & beat until stiff peaks form.
-Add condensed milk,strained yogurt & beat well.
-Add mango puree,lemon juice,mango essence & beat well.
-Add yellow food color & beat well.
-In a small bowl,add gelatin powder,hot water & whisk well.
-Now add dissolved gelatin,beat well & transfer to a piping bag.
-Pipe out prepared cheesecake filling in molds,spread evenly & freeze for 4-5 hours in freezer or refrigerate overnight.
-Take out mini cheese cakes from molds,garnish with whipped cream,mango puree,mint leaves & serve (makes 6).

-Bowl per sieve aur malmal ka kapra rakh dein,dahi dal ker malmal ka kapra tie ker lein aur 6-8 hours ya pani completely drain out hunay tak hang ker lein phir strained yogurt ko bowl mein nikal lein (approx. 100g) & side per rakh dein.
-Bowl mein whipping cream dal dein aur stiff peaks form ho janay tak ache tarhan beat ker lein.
-Condensed milk & strained yogurt dal ker ache tarhan beat ker lein.
-Mango puree,lemon juice & mango essence dal ker ache tarhan beat ker lein.
-Yellow food color dal ker ache tarhan beat karein.
-Chotay bowl mein gelatin powder aur garam pani dal ker ache tarhan whisk ker lein.
-Ab dissolved gelatin dal ker ache tarhan beat karein aur piping bag mein transfer ker lein.
-Molds mein cheesecake filling dal ker evenly pheela lein & freezer mein 4-5 hours ya overnight kliya refrigerator mein rakh dein.
-Mini cheese cakes from ko molds sa nikal lein,whipped cream,mangi puree aur podina sa garnish ker ka serve karein (makes 6).

Baking Supplies
* Cupcake liners - red foil or paper (I prefer foil)
* Muffin tin - cupcake pan - standard size
* Cheesecake Filling: cream cheese (I use Philadelphia cream cheese), sugar, lemon zest (rind),vanilla extract or vanilla bean paste, eggs, sour cream and salt
* Crust: graham crackers / graham cracker crumbs, sugar - white granulated, unsalted butter, salt
* Topping: For this recipe demonstration I used strawberry and raspberry jam, and topped each cake with a sliced, fresh strawberry and some blueberries.
** Note: Fruit pie fillings (Cherry, berry, or any fruit), preserves, and jellies, also make easy toppings.

Today is my husband’s birthday and I want to make him a small surprise - his favorite New York style cheesecake ???? The recipe is pretty easy itself. Just follow all instructions and you’ll get a delicious and sweet dessert :)

Ingredients for 8 mini cheesecakes
Cookies - 200gr
Butter - 50-gr
FILLING:
Cream cheese - 450 gr
Sugar -100 gr
Whipping Cream-100ml
Eggs - 2 eggs
Vanilla extract or vanilla - 2 drops
No-Bake White Chocolate Raspberry Cheesecake Recipe
This No-Bake White Chocolate Raspberry Cheesecake is one of the best no-bake cheesecakes ever and it’s very easy to prepare. The raspberry heart shapes on top makes it ideal for Valentine’s Day but is perfect for any other occasion as well.

Ingredients
Makes about 10 servings
Crust
7 oz (200g) oreo cookies
4 tbsp (60g) butter, melted
Raspberry Coulis
1 1/2 cups (150g) raspberries, fresh or frozen
1/4 cup (50g) sugar
1 tbsp (15ml) lemon juice
1 tsp (2g) cornstarch
Cream Cheese Filling
7 oz (200g) white chocolate, small pieces
4 tbsp (60g) whipping cream
1 pound (500g) cream cheese, room temperature
1/4 cup (30g) powdered sugar
Lemon zest of a lemon
2 tsp (10g) vanilla extract
1 cup (240g) whipping cream (35% fat), chilled
1. Prepare the raspberry coulis. In a small saucepan, whisk together suga,cornstarch and lemon juice. Add raspberries and bring to a boil over medium-low heat, stirring constantly. Simmer for 5 minutes and remove from heat. Sieve the sauce to remove seeds and set aside to cool down until ready to use.
2. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened.
3. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the filling is prepared.
4. Prepare the filling. Place white chocolate and the 4 tbsp of cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat.
5. In a large bowl mix cream cheese until smooth. Add powdered sugar, lemon zest and vanilla extract and mix to combine. Mix in melted chocolate and set aside.
6. In another bowl mix whipping cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture.
7. Pour the filling over the prepared crust, use an offset spatula to spread it evenly.
8. Place the raspberry coulis into a piping bag fitted with a plain small tip and pipe small circles in a swirl pattern on the top of the cheesecake.
9. Use a toothpick and run it into the center of each circle to create heart shapes.
10. Cover and refrigerate the cheesecake for at least 4 hours or better overnight.
11. Serve with more raspberry coulis alongside. Enjoy!
