How To make Lisas' Italian Meat Loaf
1/4 cup evaporated milk
1/2 cup tomato sauce
1/2 cup corn flake crumbs
1 1/2 lb lean ground beef
1 small onion
finely chopped
1 clove garlic :
finely minced
1 tablespoon Worcestershire sauce
2 eggs
1 teaspoon oregano
1/2 teaspoon dried basil
1 cup ricotta cheese
1/2 cup parmesan cheese
salt&pepper to taste
Blend all but 1/4 cup of parmesan cheese, 1/4 cup of the tomato sauce and oregano, basil, and ricotta. Blend ricotta, oregano and basil. Place 1/3 of the meat mixture in an oiled baking dish. Spread with 1/2 of the ricotta mixture. Repeat ending with meat.Top with remaining tomato sauce and sprinkle with remaining parmesan cheese. Bake at 350 for 45-60 minutes or till done.

Cheeseburger Meatloaf
1 1/2 lb chopped meat /ground beef
1 1/2 to 2 cups c. grated cheddar
8 to 10 slices of crisp bacon, crumbled
2 eggs, beaten
1 T. Worcestershire sauce
1/4 c. Plain bread crumbs
1/4 c. mayo
1/4 to 1/2 teaspoon salt
1/4 teaspoon pepper
1/4 c. BBQ sauce
1 6 oz. can fried onion rings
Mix together first 9 ingredients. Add 1/2 the BBQ sauce to the meat mixture, and 3 ounces(half the can) of the onion rings slightly broken up..don't overmix.. Next form a meatloaf shape in a 9x5 loaf pan of a baking dish. (putting bread slices under meat will help absorb some grease. Spread remaining BBQ sauce on top. Bake at 350 for 40 minutes or so. Top with remaining onion rings and cook another 5 to 7 minutes.

CHICKEN MEAT LOAF
Ingredients
250 grams chicken mince
1 slice brown bread
1 tablespoon oil + for greasing
½ cup milk
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 small carrot, finely chopped
½ medium green capsicum, finely chopped
1 teaspoon dried oregano
Crushed black peppercorns to taste
1 tablespoon Worcestershire sauce
1 tablespoon tomato ketchup
Salt to taste
1 egg white
Sauce
1 tablespoon butter
½ medium onion, finely chopped
8-10 button mushrooms, sliced
Crushed black peppercorns to taste
Salt to taste
1 cup chicken stock
1 tablespoon cornstarch
Method
1. Preheat oven at 180ºC. Grease a loaf tin with some oil.
2. Take chicken mince in a bowl.
3. Soak bread slice in some milk for 5 minutes.
4. Heat oil in a non-stick pan. Add onion and sauté till golden. Add garlic and sauté on low heat for 30 seconds.
5. Add carrot, mix and cook for a minute. Add capsicum, mix and cook for a minute. Remove from heat.
6. Squeeze out milk from the bread, add the bread to the chicken and mix well. Add dried oregano, crushed peppercorns, Worcestershiresauce, tomato ketchup and salt and mix well. Add egg white and mix again.
7. Add sautéed vegetables to chicken and mix well.
8. Put the prepared chicken mixture into the greased loaf tin and level it out. Cover the loaf tin with aluminum foil.
9. Place the loaf tin on a baking tray, put the tray in preheated oven and bake for 30-40 minutes. Remove from heat and cool.
10. To prepare sauce, heat butter in a non-stick pan. Add onion and sauté till golden. Add button mushrooms and sauté for 1-2 minutes. Add crushed peppercorns and salt and mix well. Add chicken stock, mix and cook on low heat for 5-6 minutes.
11. Dissolve cornstarch in some water to make a smooth slurry, add to the pan, mix and cook till the sauce thickens.
12. Demould the baked meat loaf and place it on a serving plate. Slice. Pour the prepared sauce in a jar and drizzle the sauce over the meat loaf.Serve immediately.
Preparation time:12-15 minutes
Cooking Time: 50-55 minutes

Italian Meatloaf Maddalena Style! It
Half a cup of grated Romano cheese
One large onion, chopped
Salt and pepper to taste
3 tablespoons of chopped parsley
Garlic powder to taste
Two eggs
Half a cup of seasoned breadcrumbs
One jar of marinara sauce
1 pound of ground beef
One and a half pounds of ground pork
2 cups of diced mozzarella cheese
Mozzarella cheese for the top to taste

Note: the G. Washington Broth is vital. It will not taste the same without it.
-In a large mixing bowl combine:
-1/2c butter, melted
-5 eggs
-24oz small curd cottage cheese
-1/2c chopped pecans
-1 white onion diced fine
-G.Washington Broth, 2 packets Rich Brown, 1 packet Golden
-7 oz Original Special K, crushed small
-Combine and put in large, greased casserole dish, (so it won't stick)
-cover with tin foil and bake at 350 for 45 minutes
- remove Tin foil and bake 15 minutes more
- you can leave it in a little longer if you like. The edges and top getting a nice browned finish really makes it good!
