How To make Lisa's Spareribs
6 pounds baby back ribs
MARINADE:
4 cloves garlic chopped
1/4 cup cider vinegar
6 ounces pineapple juice
2 tablespoons brown sugar
2 tablespoons soy sauce
:
BBQ SAUCE 1/4 cup Brown sugar
2 tb Paprika
chile powder 2 ts Salt
2 ts Dry mustard
2 Bay leaves
1/2 t Chili powder
1/4 t Cayenne pepper
1/4 c Worcestershire sauce
1 lime juice
2 c orange juice
1/2 c Catsup
1 c Water
2 cloves garlic :
chopped
1 onion -- chopped fine
Marinate ribs overnight. Steam for 1 hour before grilling.
Mix all sauce ingredients in large saucepan. Bring to boil over high heat. Simmer until slightly thickened, about 30 minutes. Discard bay leaves.
Use the sauce to mop the ribs and at the table, for dipping.

Lisa Marie Recipes - Caja Smoked BBQ Ribs - Matt Basile Style
In this clip Matt Basile from the well known Toronto based food brand, Fidel Gastro's, unveils the secrets to create mouth watering Caja Smoked BBQ Ribs.
Caja style cooking originally comes from China bit has a long and storied tradition throughout many different cultures. In the southern part of the United States it began to gain popularity and now cooking with a Caja style grill can be seen all over the world. Some notable celebrities that have used the Caja method on national television for smoking a variety of meats include Martha Stewart, Bobby Flay and Andrew Zimmern.
One of the most outstanding features of Caja style cooking is that it reduces your cooking time dramatically when compared to a more traditional style, such as the often seen rotisserie roast.
Matt recommends starting with all your charcoal in the center of the Caja grill, add some lighter fluid, then light a few spots until you see some fire spring up. At that point add bits of dry wood to get the charcoal to start really heating up. Once you see the charcoal is all beginning to catch fire you can just sit back and watch those coals get red hot. Once those coals are glowing simply spread them out across the top of the Caja grill.
Matt uses baby back ribs for his Caja Smoked BBQ Ribs recipe but you can also substitute savory cut side ribs if you prefer. He mixes salt, pepper, paprika, garlic, onion powder, and some honey over the ribs prior to putting them into the grilling rack. Once the ribs are coated put them on the Caja rack running them lengthwise on the bars to ensure they stay secure while cooking.
Now that your meat is properly prepped put the rack into the smoker and cover it with the lid that should now have the hot coals on it and is ready to start cooking. After 45 minutes top off your coals, remove the lid and flip your ribs. While you're flipping them also add another coating of honey. Next you're going to seal up the box and cook them for an additional 45 minutes.
After you have patiently waited that extra 45 minutes you can pull off the lid and plate your delicious, honey flavored, Caja smoked BBQ ribs.
