How To make Linguine"Deliziose"
1 lb Linguine
1 lb Prawns, medium, cleaned
deveined 1 lb Salmon, filet, fresh,
:
julienned coarsely Flour 3/4 c Oil, olive
1 c Leeks, julienned
6 oz Mushrooms, sliced
1/2 c Wine, white
1 tb Marjoram
1 tb Parsley, chopped
2 md Garlic, cloves, minced
Salt Pepper 2 tb Butter (optional)
1 c Broth, chicken
Boil linguine according to the package instructions or make it fresh. Cool under cold running water and set aside. Flour the prawns and salmon lightly. In a large saute pan, heat the olive oil over high heat, then add the prawns and salmon and saute for 1 minute. Add the leeks and mushrooms (one at a time), and saute for 1 minute after each addition. Next, add wine, marjoram, parsley, garlic, salt, pepper, and butter. Saute lightly for 1 minutes. Add broth, lower heat and simmer for 2 minutes, adding more broth if the mixture becomes too dry. Add the drained linguine and mix well, then simmer for 1 minute. To serve, place linguine on a plate first, decorate with prawns, then pour the remaining sauce over both. Garnish with parsley. Source: Great Chefs of San Francisco, Avon Books, 1984

Ciao amici! Oggi vi presento una facile e deliziosa ricetta di pasta alle melanzane! Ricetta facile e veloce perfetta per pranzo o cena che piacerà a tutta la famiglia. Pasta alle melanzane è un primo piatto delizioso e soddisfacente che chiunque può preparare senza problemi seguendo fino alla fine il mio video. Per questa ricetta ho usato le tagliatelle ma voi potete utilizzare il tipo di pasta che preferite. In pochi minuti e con pochi semplici ingredienti preparerete una pasta semplice e molto gustosa! Provate questa facile e deliziosa ricetta con le melanzane e rimarrete soddisfatti!
Ingredienti:
- 300 gr di pasta (tagliatelle)
- 2 melanzane
- 1 cipolla
- 2 spicchi d'aglio
- 300 ml di passata di pomodoro
- Sale, pepe
- 2 cucchiai di panna
- Olio d'oliva
- 20 gr di parmigiano
- Prezzemolo

EASY Crab Pasta Recipe!
A fresh, tasty 15 minute seafood pasta that is spectacular eaten al fresco with a glass of chilled wine. Irish crab is such a great ingredient to use in your cooking, it's seriously versatile, tasty and you can buy it fresh or prepared. It’s naturally nutritious and brim-full of protein, Omega 3 and essential vitamins and minerals. Tossed through zesty courgette with al dente linguine it makes for a perfect little summer supper!

Serves: 4
Ingredients (US & METRIC):
400g/ 14 oz linguine
1 tbsp olive oil
30g/ ¼ stick unsalted butter
2 cloves garlic, finely sliced
1 red chilli, deseeded & finely chopped
Finely grated zest of a lemon and a good squeeze of juice
2 courgettes, julienned or coarsely grated
50g/ 2 oz brown crab meat
200g/ 7 oz white crab meat
3 tbsp finely chopped chervil or parsley
Sea salt and freshly ground pepper

AWESOME EASY SHRIMP LINGUINE
ingredients:
1 pound SHRIMP (20-30, peeled and deveined)
8oz LINGUINE (about ½ box)
1-2 cups BROCCOLI florets (or substitute ½ cup PARSLEY if you're not into broccoli)
6-8 GARLIC cloves (minced)
½ large ONION (finely chopped)
½ stick BUTTER
3-5 Tbsp OLIVE OIL
SALT to taste
(add oregano or Italian herbs if desired--I like just the extra garlicky taste)
serve with PARMESAN CHEESE
directions:
After prepping the ingredients, get your pasta cooking. I like to add 1 Tbsp of olive oil to my pasta water as well as a 2-4 tsp salt. Cook the pasta according to the package directions and whatever firmness you desire. I'm using whole grain wheat linguine for this recipe, which takes about 12 minutes to cook--a bit longer than most linguine. The cooking time for the skillet ingredients should be around 7-9 minutes, so try to time your pasta to finish with the shrimp--overcooked shrimp are rubbery and overcooked pasta is mushy, so timing is everything!!!
In your skillet, heat 2 Tbsp olive oil and 1/4 stick butter on medium heat. When hot, add garlic and cook for 1 minute. Add onions and continue to cook a couple more minutes. Add broccoli florets, and add more butter and oil as needed. Sauté florets, garlic, and onions another 2 minutes and then add shrimp (if you don't want to use broccoli, substitute 1/2 cup chopped parsley and Italian herbs and add along with the shrimp). The shrimp will be done when they turn pink--don't overcook or they'll turn rubbery!! Remove cooked pasta from water and add directly to the skillet. Don't drain or strain the pasta!!--you're just throwing away good flavor. Add the remainder of your original 1/2 stick butter. Mix pasta and ingredients. Add some pasta water to the mix (about 1/2 cup or so). I find that the salt in the water and butter is plenty enough for me, but add a little more salt if desired. Remove the skillet from the heat and serve. Fresh Parmesan cheese and toasted garlic bread are nice accompaniments!! Maybe some wine?

Pasta vongole is a simple dish PACKED with flavour. Bursting with all of the colours of Italy, this seafood pasta combines juicy cherry tomatoes, parsley and garlic with one of the most flavoursome shellfish in the Adriatic sea – Vongole. (Don’t underestimate the flavours of these tiny morsels!)

SPAGHETTI VONGOLE
INGREDIENTS:
Linguine pasta 500g
White wine
1 clove of garlic (finely chopped)
500g vongole (Pipi’s)
Extra virgin olive oil
8-10 cherry tomatoes
Pinch of rock salt
Sprinkle of pepper
Generous amount of fresh parsley
UTENSILS:
1 x large saucepan
1 x 5L large pot
Sharp knife
Wooden spoon
METHOD:
1. Boil 5L of water in a large pot in preparation for your spaghetti vongole.
2. Turn the stove on to a medium/high heat and add a generous amount of extra virgin olive oil.
3. Once the oil has begun to warm, add the finely chopped garlic and simmer until it starts to change colour.
4. Add the vongole into the pan and stir well. Then add a glass of white wine and let it simmer.
VINCENZO’S PLATE TIP: Be careful not to get burnt when adding in the wine as when it hits the oil in the pan, there might be a small burst of steam!
5. Leave the vongole to simmer in the pan until they begin to open. If they don’t open in the middle, it normally means they are not good to eat.
6. Next, add 8-10 cherry tomatoes diced in half – the juicier, the better! Stir through well.
7. Squeeze half a lemon into the pan, and then add a pinch of rock salt and pepper, then mix.
8. Add a generous amount of fresh parsley (chopped) and let it simmer so all the juices and flavours infuse the vongole shells.
9. Once the water has boiled in the large pot, add the pasta linguine and leave it to cook based on the packet instructions (al dente is always best!).
10. When the cherry tomatoes have softened and the liquids have started to evaporate, the dish is almost ready.
11. Strain the pasta once it has cooked to your liking and add it to the pan (on a low heat).
12. Mix the pasta well so that it soaks up the delicious liquids and flavours from your sauce.
