How To make Linda's Potato Skins
6 md Baking potatoes
3/4 c Cheddar cheese, shredded
1/3 c Butter
6 sl Bacon, fried and crumbled
1/3 c Green onion, thinly sliced
Salt & Pepper *-*-* 1/3 c Milk | You can add these
-ingredients to the 1/4 c Butter | mashed potato
-centers for mashed Salt & Pepper | potatoes, if desired. *-*-* Scrubb potatoes, dry, then pierce with fork several times. Arrange on a baking sheet and bake in 375 degree oven for about 1 hour or until tender. Let stand until cook enough to handle. Cut potatoes in half lengthwise and scoop out centers, leaving 1/8" potato in shell. Cover. Chill shells up to 2 days until ready to use for the skins.
If desired, add the 1/3 cup milk, 1/4 cup butter, salt & pepper to use potato centers as mashed potatoes. When ready to prepare skins, melt the 1/3 cup butter. Brush shells with the butter, inside and out. Place, cut side up, on baking sheet. Bake in a 500 degree oven for 20 minutes or until brown and crisp. Distribute some bacon, onion, and cheese in each shell. Bake just until cheese melts. Serve hot. If the potatoes are large, you may want to cut in half crosswise before serving. Vegan Sweet Potato Skins Recipe - Twice Baked Sweet Potato Dessert
Potato skins are usually an appetizer loaded with bacon and cheese, but these twice baked sweet potato skins are topped with oatmeal, raw sugar, and vegan butter. Hot and ready just in time for dessert.

Vegan Sweet Potato Skins Recipe - Twice Baked Sweet Potato Dessert
Ingredients:
1 Sweet Potato
1/4 cup quick cooking oats
2 tablespoons vegan butter
1 tablespoon raw sugar
1/4 teaspoon cinnamon
Directions:
Preheat the oven to 400 degrees F. Thoroughly rinse the sweet potato and brush with a produce brush if you have one.
Use a fork to pierce the skin of the sweet potato about 10 times.
Place the sweet potato on a baking sheet and bake for about an hour.
Remove the sweet potato from the oven and allow to cool for 10 minutes so that it is cool to touch.
Cut the sweet potato in half and remove the potato. You want to leave about 1/2 inch sweet potato border around the skin.
In a small bowl, cream together the oats, vegan butter, raw sugar, and cinnamon. Add that to the sweet potato making sure that it is snug in the cavity.
Return to the oven under a low broil for 10 - 15 minutes until the top is toasty and browned.
