How To make Lighter Cinnamon Rolls For Bread Machine
1 ea Yeast package
1/4 c Non-fat cottage cheese
1/2 c Warm water
2/3 c Warm non-fat milk
3 c White bread flour
1 c Whole wheat flour
1/2 c Non-fat liq. egg subst.
3 T Sugar
2 T Corn-oil Margarine OR
2 T Fat-free butter spray
1/4 c Sugar
1/4 c Packed brown sugar
2 t Ground cinnamon
6 T Powdered sugar, sifted
2 t Non-fat milk
1. Put all dough ingredients into bread machine and run on dough cycle
which mixes, kneads, and rises the bread. At the end of dough cycle, remove the dough from machine, punch down, and knead on a floured board for 1 minute. 2. Roll dough out to a 20x12 inch rectangle and brush with the melted
margarine or spray with the non-fat butter spray. Combine sugars and cinnamon and sprinkle evenly over the dough. 3. Roll up dough, jelly-roll fashion, starting with the long edge.
Pinch edges together and slice into 12 rolls. Place, cut side down, onto baking sheet. Cover and let rise in a warm place until doubled, about 45 minutes. 4. Preheat oven to 350 F. Bake 15 to 20 minutes, being careful not to
burn rolls. Remove from oven and drizzle with icing, if desired. To make icing, combine powdered sugar and milk and drizzle 1/2 to 1 teaspoon over each roll. Cinnamon Swirl Bread In The Regal Bread Machine--PART 1
In this video I demonstrate how I make my homemade cinnamon swirl bread entirely in my bread machine. There is only a small amount of hands-on work to make this delicious bread! I hope you give it a try. :) Sorry for the abrupt end to this video, my camera decided to turn off suddenly. :( PLEASE continue with Part 2 to see the end result. For best results, make sure all ingredients are room temperature. Here is my recipe for the bread:
Cinnamon Swirl Bread Machine Bread
(Makes a 1lb Loaf)
3/4 c. Buttermilk
1 Egg
2 t. Unsalted Butter
1 c. Bread Flour
1 c. Whole Wheat Pastry Flour
1 T. Honey
3/4 t. Salt
1 t. Ground Cinnamon
1 t. Active Dry Yeast
Filling:
3 T. Light Brown Sugar
2 t. Ground Cinnamon
1 T. A.P. or Bread Flour
*Optional--1/2 c. Raisins
(Mix filling ingredients in a small bowl and set aside until ready to fill the dough.)
Begin by adding liquid/wet ingredients to the bread machine loaf pan. Add all remaining ingredients, adding the yeast last. Place pan into bread machine and run on dough cycle. **Check the dough's progress during the first few minutes of the mixing cycle to make sure texture is correct. If it looks very shaggy with lots of flour along the sides of the pan, add a little water, 1 T. at a time, letting dough absorb it before adding more. If it's too wet and looks more like batter than dough, add a little bit more flour, 1T. at a time and allow the machine to work it in before adding more, until it looks smooth and pulls together into a ball. When cycle is complete, remove dough to a well floured work surface. Using floured hands, gently pat dough out to a rectangle approximately 12-14 long. Use a rolling pin if needed to roll dough a bit thinner. Sprinkle filling evenly over dough spreading with your hands. Starting at the short end, tightly roll up, tucking in side edges as you go. Seal edges together. Turn rolled dough over so seam is on the bottom. Pinch ends and tuck them under loaf. Remove paddle from bread pan and lightly spray post with cooking spray. Using both hands, lower the dough into the pan and gently pat it towards the corners. Return pan to bread machine but DO NOT plug it in! Close lid and allow dough to rise for 45-60 minutes or until doubled in size. After dough has risen, plug machine in and use the bake cycle to finish loaf, about 60 minutes. When bread is done, remove from pan and allow to cool on cooling rack for at least 30 minutes before slicing. This may take a fair amount of willpower! :D I hope you give this recipe a try, it is delicious!!

Dinner rolls: light, fluffy, buttery and impossible to resist
Homemade with just a handful of simple ingredients, the BEST Dinner Rolls can be on your table in a jiffy!
INGREDIENTS
240ml (1 cup) of milk
7g of dry yeast
10g (1 tbsp) + 10g (1 tbsp) of sugar
1 egg
60g (1/4 cup) of butter
6g (1 tsp) of salt
390g (3 cups) of all-purpose flour
Vegetable oil
Butter (melted)
METHOD
1. In a bowl add the milk, yeast, and one spoon of sugar and mix until sugar and yeast dissolve. Cover with cling film and let it rest for 5 minutes.
2. Add the spoon of sugar, egg, butter, salt, flour, and mix until all is well combined. When the dough starts to form knead with your hands until the dough is smooth.
3. Pour the vegetable oil into the bowl, transfer the dough and cover with cling film. Let it rise for 90 minutes, or until doubles in volume.
4. After time has elapsed cut the dough into 15 pieces and form small balls. Transfer them to the baking tray (20x30cm baking tray size), cover them with cling film, and let them rise for 1 more hour.
5. Brush the rolls with melted butter, transfer to the oven, and bake at 180°C/360°F for 25 minutes.
6. Remove them from the oven when they are golden brown and serve.

Ingredients:
For the dough:
1 cup warm milk
2 eggs
1/3 cup melted buter
4 cups bread flour
1/2 cup white sugar
Rapid rise yeast pack or 2.5 teaspoons yeast
*You can use a hand mixer, stand mixer, or a bread machine on dough setting to make the dough.
Set the dough aside for 30 minutes in a covered bowl at room temperature.
Sprinkle for cinnamon rolls:
1 cup brown sugar
2 tablespoon cinnamon
1/2 cup softened butter to spread on dough before sprinkling brown sugar and cinnamon mixture.
Bake cinnamon rolls for 15 minutes at 400F/200C.
Cream Cheese Frosting Recipe:
2 8oz. cream cheese
1/2 cup softened butter
1.5 cup powdered sugar (more if you prefer sweet over the cream cheese flavor)
1 teaspoon vanilla extract
