How To make Lentil and Bulgur Cakes
1 c Dried lentils
3 c Water
Salt 3/4 c Butter
3/4 c Bulgur, fine grade
1 md Onion, finely chopped
1/4 c Finely chopped green or
-sweet red pepper 1/4 c Finely chopped green onions
-(white part and 2" of -green parts) 1/4 c Finely chopped parsley
1/4 c Finely chopped fresh mint
Paprika A vegetarian "kibbeh" with lentils in place of the meat. From "The Cuisine of Armenia," by Sonia Uvezian. Combine lentils, water and dash salt in heavy saucepan. Bring to boil over high heat, then simmer until lentils are tender, about 20 minutes. Add more hot water if needed. Stir in 1/2 cup butter and bulgur. Simmer 2-3 minutes. Remove from heat and cover. Set aside 15 minutes. In heavy skillet, melt remaining 1/4 cup butter over moderate heat. Add onion. Saute until golden brown, stirring frequently. In large mixing bowl combine sauteed onions, lentil and bulgur mixture. Dipping hands occasionally into bowl of warm water, knead mixture until well blended, 2-3 minutes. Add 3 tablespoons sweet pepper, 3 tablespoons green onions, 3 tablespoons parsley and 3 tablespoons mint to mixture and mix well. Adjust seasonings to taste. Keeping hands moistened, form mixture into 1/2 patties. Arrange on serving dish. Sprinkle with reserved sweet pepper, green onions, parsley and mint. Season to taste with paprika. Serve with cucumber and tomato salad.

Ingredients
• 1 cup fine bulgur wheat
• 1 cup water
• 1/2 tsp salt
• 1 tsp sweet paprika
• 1/2 tsp hot paprika
• 1/2 tsp turmeric
• 1/2 tsp cumin
• 1/4 tsp black pepper
• 2 tbs extra virgin olive oil plus extra for drizzling
• 1/3 cup olyke oat flour
Instructions
1. In a large bowl, soak bulgur wheat in 1 cup of water for 20 minutes until the water has been absorbed.
2. With your hands squeeze any water left on the bulgur wheat.
3. Preheat the oven to 375F. Line a baking sheet with parchment paper
4. Add the rest of the ingredients to bulgur wheat and mix until well combined
5. Using your hands, form patties 8 medium or 16 small patties
6. Arrange patties on lined baking sheet. Drizzle each one lightly with olive oil and bake at 375F for 30 minutes, until golden brown.

???? Ingredients:
200g | 1 cup red split lentils
500ml | 2 cups water
150g | 2 cups broccoli
1 onion
1 garlic clove
1 carrot
50g | 1 3/4 cups spinach
1tsp Korean chilli flakes
1tsp ground coriander
1tsp smoked paprika
salt and ground black pepper to taste
5tbsp corn meal
chickpea crumbs or breadcrumbs
a little oil for frying
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗ For the patties to hold together place patties mixture in to the fridge for 15-30 minutes. It works miracles and you do not need a binder ????
???? Method:
Rinse 200g | 1 cup red split lentils with water.
Pour 500ml | 2 cups water.
Simmer lentils until water absorbed.
Disassemble 150g | 2 cups broccoli into inflorescences.
Pour boiling water. Cover and set aside for 5 minutes.
Chop 1 onion.
Sauté until translucent for about 3 minutes.
Chop 1 garlic glove.
Peel and grate 1 carrot.
Season with salt.
Place cooked red lentils in a mixing bowl.
Add cooked vegetables mixture.
Grate broccoli florets.
Finely chop 50g | 1 3/4 cups spinach.
ℹ️ You can use any greens of your choice like parsley, cilantro, dill etc.
Season with 1tsp Korean chilli flakes, 1tsp ground coriander, 1tsp smoked paprika,
salt and black pepper to taste.
Add 5tbsp or more corn meal.
Mix until combine and transfer to the fridge for 15 minutes [it helps patties to hold together].
Shape into patties, about 1/2 inch thick.
Coat with chickpea crumbs or breadcrumbs.
Heat a little olive oil in a non stick skillet.
Fry veg patties for about 5-7 minutes on each side or until golden and crispy.
Top with tahini dressing or your favourite sauce and enjoy! ????

For years, like most people, I believed that bread should be made with wheat. But it is possible to make bread with almost any seed. Lentils are a good example of that. Today I want to show you how easy it is to turn lentils into a gluten free bread and also want to take this lentil bread to the next level by turning it into a magnificent savoury lentil cake.

Lentil Bread
Difficulty: Easy
Prep time: 15 minutes
Cooking time: 35 minutes
Serving: 6-8 people
2 cups red lentil
1 cup yoghurt
4 eggs
2 packs of baking powder, 20 g
1 teaspoon salt
60 ml olive oil
Nigella & sesame seeds
• Preheat the oven to 180 C (355 F) on upper and lower heat without fan.
• Wash the lentils well and soak in water for at least 4 hours, preferably overnight, for them to expand and soften.
• Sieve the lentils and add in the food processor. Pulse until it becomes a puree.
• Transfer some pureed lentil to a bowl then add the yoghurt, eggs, baking powder, salt, and olive oil into the processor. If your food processor is big enough to mix all ingredients there is no need to take out some of the lentil puree.
• Mix all ingredients (including the puree in the bowl) in the food processor and pulse until everything is smooth.
• Oil the tray with olive oil and pour the mixture into the tray.
• Sprinkle some nigella and sesame seeds.
• Place the tray into the oven and bake it for 35 minutes.
• Rest for about 30 minutes to cool and eat with loved ones.
Savoury Lentil Cake
Difficulty: Easy
Prep time: 15 minutes
Cooking time: 1 hour and 10 minutes
Serving: 6-8 people
2 cups red lentil
1 cup of yoghurt
4 eggs
2 packs of baking powder, 20 g
1 teaspoon salt
60 ml olive oil
250 g halloumi, diced
4 sprigs of spring onion, chopped
15 sprigs of dill, chopped
1/2 teaspoon black pepper
Nigella & sesame seeds
• Preheat the oven to 180 C (355 F) on upper and lower heat without fan.
• Make the plain lentil bread mixture by following the steps above.
• Add the halloumi, spring onion, dill, and black pepper into the mixture.
• Oil the tray with olive oil and pour the mixture into the tray.
• Sprinkle some nigella and sesame seeds and put into the oven for about one hour and ten minutes.
• Let it rest for about 30 minutes to cool down and eat with loved ones.
