How to Make LENTIL SOUP Like an Italian
Lentil soup is bold, hearty and bursting with flavour. In Italy, it is a New Years' tradition to eat this soup at the stroke of midnight. My lentil soup recipe has an aromatic twist - fresh rosemary and oregano which I’m convinced Nonna would approve of, just the smell in your kitchen is enough to tempt tastebuds! Each bowl is filled with soft lentils drowning in a delicious herby tomato broth then topped with crispy bread bites and a fresh parsley garnish.

INGREDIENTS WITH GRAM AMOUNTS
1/4 cup (54 grams) extra virgin olive oil - plus more for finishing
1 medium onion - diced
2 ribs celery - diced
2-3 medium carrots - diced
1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below
1 rind Parmigiano Reggiano (optional)
salt and pepper to taste

Homemade Lentil Soup Recipe
This delicious Lentil soup recipe is jam-packed with spices and caramelized vegetables to bring about an incredibly flavorful soup. This is one of the easiest-to-make most nutritious soups on my website and the taste is beyond amazing.
Lentils are a legume that is indigenous to the Mediterranean and Middle Eastern Countries. They are seeds of a plant that are jam packed with fiber, potassium and protein and make for a great meat replacement.
Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful including by adding them into soup. When other ingredients are introduced that compliment lentils like onions, garlic, spices, and lemon, the taste is out of this world.
There are many variations of lentil soup depending on where you live so do not be surprised if you see different ingredients in it. My version is much more of a Middle Eastern Lebanese style.

Ingredients for this recipe:
• 2 tablespoons olive oil, ghee, or clarified butter
• 2 peeled and medium diced yellow onions
• 2 peeled and medium diced carrots
• 2 peeled and medium diced ribs of celery
• 3 finely minced cloves of garlic
• 1 ½ teaspoons ground cumin
• 1 teaspoon ground coriander
• 3 cups green lentils, rinsed
• 1 large peeled and medium diced potato
• 2 bay leaves
• 9 cups chicken stock
• juice of 1 lemon
• salt and pepper to taste

It's easy, filling, healthy, nutritious, and you can alter it in many ways to suit your taste. It's high in fiber. It's gluten free, just as a soup, or you can add pasta to make pasta lenticchie and you can also add meat, or other flavors, or not... you decide. Try out his recipe and let us know what you think.

Lentil Soup ????
In 1 Tbsp olive oil add.
1 large onion
1 russet potato
1 cup shredded carrots
1 tsp cumin
2 tsp paprika
1 tsp salt
1 cup red lentils
Optional: zucchini
Use 5-6 cups chicken stock for a thicker soup.
Use 7-8 cups chicken stock for a more liquidy soup. (My preference)
Added 2 chicken bouillon cubes because stock had plenty of salt.
You can add water instead and 3-4 more chicken bouillon cubes if you don’t have stock.
Finish with lemon and enjoy☺️
