How To make Lemony Cheesecake with Fresh Fruit

Vegetable cooking spray 1/4 c Graham cracker crumbs
16 oz Fat free cream cheese (NOT
-product in tub) 1 cn Eagle Brand Fat Free or Low
-Fat Sweetened Condensed -Milk (NOT evaporated milk) 4 ea Egg whites
1 ea Egg
1/3 c ReaLemon lemon juice from
-concentrate 1 t Vanilla extract
1/3 c Unsifted flour
1 c Fresh assorted fruit
Preheat oven to 300 degrees F. Spray bottom of 8-inch springform pan with cooking spray; sprinkle crumbs on bottom of pan. In mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand until smooth. Add egg whites, egg, ReaLemon and vanilla; mix well. Stir in flour. Pour into prepared pan. Bake 50 to 55 minutes or until center is set. Cool. Chill. Serve with fruit. Refrigerate leftovers.
