This Lemon Sponge Cake is super light, sweet and moist. Infused with fresh lemons, it has a tangy lemon flavor.
Lemon Sponge Cake
Ingredients:
2 large lemons
4 eggs (medium size)
100g sugar
90g plain flour
½ tsp baking powder
40ml corn oil
70ml lemon juice
1 tbsp lemon zest
Baking Temperature: 150°C
Baking Time : 60 minutes
Round Baking Pan: 18cm in diameter
Every oven works differently. Baking time may vary
Tips: Gently insert a toothpick in the centre of the cake. If it comes out clean, the cake is ready.

pinwheel cookies and lemon sponge pie
two very easy quick desserts for you. for the cookies you need: 1/2 cup butter, 1/2 cup sugar, 1 egg, 3 tablespoons milk, 1 1/2 cups flour, 1 1/2 teaspoons baking powdwe, 1/8 teaspoon salt and 1/2 teaspoon vanilla.
mix all ingredients divide dough in half. add 1/4 cup cocoa powder or 1 square of bakers chocolate melted. to half of the dough. roll on lightly floured board, put chocolate dough on top of white dough, roll up like a jellyroll, slice thinly and bake at 350 for 8 to 10 minutes.
For the pie: one crust pie dough, you can but this already made or make one. to make it you need 1 1/2 cups flour, 1 teaspoon salt 1/2 cup butter and about 4 tablespoons cold water. mix flour and salt, add butter and with a pastry blender or 2 knives, cut in the butter until crumbly. add water 1 tablespoon at a time mix with a fork until all mixed, do not add to much water and over mix as this will dry out your crust. For the filling: 1 cup sugar, 3 eggs seperated, 1/4 teaspoon salt, 1 cup milk, 2 Tablespoons butter, 3 tablespoons flour, 1/2 cup lemon juice.
cream the butter, add sugar and egg yolks and mix well. add flour, salt, lemon juice and milk, mix well. add in the stiffly beaten egg whites fold in gently so you don't lose all the air in the whites. pour into a unbaked pie crust bake 350 for 45 minutes.
