Lemon Icebox Cookies
1 C Unsalted Butter
3/4 C White Sugar
1 Egg
1 Tbsp Lemon Juice
1 Tsp Vanilla
Beat with an electric hand mixer
2.5 C flour
2 tsp lemon zest
1/2 tsp Baking Powder
1/2 tsp salt
Mix thoroughly into a large ball.
Separate dough into 3 portions and form them into 8 logs.
Plastic Wrap each log and refridgerate for anywhere from 1 hour to 1 week. (or wrap really well and freeze for up to a month)
To bake:
slice into 1/3 slices and place on non-stick cookie sheet
cookies do not spread at all so you can place them close together if you want.
Bake at 350 for 8-10 minutes
Nutella Sandwich Cookies:
Use above recipe with the following changes.
No Lemon or lemon zest.
Cookies should be sliced very thin, 1/6
Don't let the cookies cool completely on the pan, give it a couple of minutes and then move them onto a cooling rack.
I still baked these for about 8.5 minutes
Once cookies have cooled you can use as much or as little nutella (or other filling like Peanut Butter, Icing, jam, other nut butters) to make them into little sandwich cookies!!!
This video was a hot mess and I apologize. I misspoke quite a few times and had a lot of interruptions from my kids and husband, and filmed it on literally 4 different days. lol But that's just my life so....lol

Lemon-Ginger Icebox Cookie Cupcakes - Betty Crocker's Red Hot Summer Trends
Cupcakes are still in the spotlight. Dessert lovers everywhere are inventing new and interesting twists on this classic confection -- even looking to retro refrigerator, or icebox, desserts for inspiration!
Cookies
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter, softened
1 egg
1 tablespoon grated lemon peel
1/3 cup finely chopped crystallized ginger
Filling
2 cups whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla
DIRECTIONS:
In medium bowl, stir cookie mix, butter, egg and lemon peel until soft dough forms. Stir in crystallized ginger. Divide dough in half. On waxed paper, shape each half into 8-inch-long roll. Wrap in waxed paper. Freeze about 1 hour or refrigerate about 3 hours until firm enough to slice.
Heat oven to 350°F. Using a sharp thin-bladed knife, cut each roll into 32 (1/8-inch-thick) slices. Rotate roll while cutting to prevent flattening. On ungreased cookie sheets, place slices 1 inch apart. Bake 9 to 11 minutes, or until edges are light brown. Cool 1 minute; remove to cooling rack. Cool completely, about 30 minutes.
In chilled deep small bowl, beat filling ingredients with electric mixer on high speed until stiff peaks form. On tray, place 16 cookies right sides up. Spread 1 tablespoon whipped cream on top of each cookie, then top with another cookie. Repeat with remaining cookies and cream, making 4 layers of cookies and ending with a layer of cream. Place each cookie cupcake in a decorative cupcake liners. Cover with plastic wrap, and refrigerate at least 8 hours. Garnish with raspberries, strawberries and blueberries, if desired.

60g Unsalted butter
40g Powdered sugar

95g Cake flour
20g Almond flour

*Dried cranberries cookie dough(20cookies)
60g Unsalted butter
40g Powdered sugar
20g egg yolk 、
95g Cake flour
20g Almond flour
35g Dried cranberries
*Cocoa White chocolate chips cookie dough (20cookies)
60g Unsalted butter
40g Powdered sugar
20g egg yolk
95g Cake flour
20g Almond flour
15g Cocoa powder
50g White chocolate chips
*Purple sweet potato powder raisin cookie dough(20cookies)
60g Unsalted butter
40g Powdered sugar
20g egg yolk
95g Cake flour
20g Almond flour
15g Purple sweet potato powder
35g Raisin
【Directions】
1. Mix butter and powdered sugar well in a large bowl.
2. Add egg yolk and mix.
3. Sift in cake flour, Almond flour, mix.
4. Divide cookie dough into 4 even portions
5. Take the 1st cookie dough. Add Dark Chocolate chip and mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
6. Take the 2nd cookie dough. Add dry cranberries and mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
7. Take the 3rd cookie dough. Add Cocoa powder and white chocolate chips, then mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
8. Take the 4th cookie dough. Add purple sweet potato powder and raisin, then mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
9. Shape dough into a cylinder with 4cm(1.6inch) diameter.
10. Wrap in plastic wrap and freeze for at least 1 hours.
11. Slice the dough into 7mm (0.3 inch) thick.
12. Place them on a baking sheet lined with parchment paper.
13. Pre-heat oven to 338 °F/170℃. Bake for 15 minutes.
14. Cool the cookies on the baking sheet or a wire rack.

상큼한 느낌이 나는 오렌지와 레몬 모양의 쿠키를 만들었어요~
쿠키 반죽으로 과일 단면의 모양을 만들어 굳혀 슬라이스해서 구웠는데 손도 많이 가고 시간도 정말 많이 걸리더라구요~
반죽이 실온에서 쉽게 물러지기 때문에 빠르게 작업하고 중간 중간 냉동실과 냉장실에서 굳혀가며 작업을 해야 한답니다~
색감과 모양이 정말 오렌지와 레몬처럼 생겨서 그런지 싱그럽고 보기만 해도 기분이 좋아지는 쿠키 인 것 같아요~
자세히 보시면 안쪽의 색보다 테두리의 색을 조금 더 진하게 만들었는데 같은 색으로 만드는 것 보다 훨씬 예쁘더라구요~
반죽에 레몬, 오렌지 제스트를 넣어 정말 과일 향을 내도 좋을 것 같아요~^^

▶재료
무염버터 200g
슈가파우더 160g
소금 1g
달걀 55g
바닐라익스트랙 2g
박력분 200g
중력분 160g
아몬드가루 40g
베이킹파우더 1g
식용색소 (주황,노랑,화이트)
▶레시피
1. 무염버터를 부드럽게 풀고 슈가파우더와 소금을 넣고 살짝 뽀얗게 될 때까지 충분히 휘핑한다.
2. 달걀과 바닐라익스트랙을 넣고 섞고 박력분, 중력분, 아몬드가루, 베이킹파우더를 체 쳐 넣고 섞는다.
3. 반죽을 약 200g 정도 씩 다른 2개의 볼에 나눠 넣고 각각 색을 넣고 섞어 원형으로 말아 냉장실에서 2시간 정도 굳힌다.
3. 반죽을 약 80g 정도 씩 2개로 나눠 넣고 더 진하게 색을 낸 뒤 넓게 펴서 냉장실에 넣어둔다.
4. 남은 반죽에 화이트 식용색소를 넣고 섞어 색을 내고 넓게 펴서 냉장실에 넣어 둔다.
5. 원형으로 굳힌 반죽을 8등분 하고 냉동실에서 20분 정도 굳힌 뒤 흰색 반죽을 사이 사이 붙여 모양을 만들고 냉동실에서 20분 정도 굳힌다.
6. 진한 색의 반죽으로 (5)를 말고 냉동실에서 30분 정도 굳힌다.
7. 반죽을 얇게 썰어 오븐 팬에 올리고 160도 (170도 20분 예열) 오븐에서 15분 정도 굽고 식힌다.
