How To make Lebkuchen(German Honey Cakes)
1 c Honey
3/4 c Light brown sugar
1 ea Lemon
juice of
2 ea Eggs :
beaten
2 1/2 c Flour sifted
1 t Baking soda
1/2 ts Nutmeg
1/2 ts Cloves
1 t Cinnamon
1/4 c Almonds :
shredded
1/4 c Citron -- chopped
Combine honey, sugar, lemon juice and rind from the lemon. Beat in egg. Sift dry ingredients and add to egg mixture. Add citron and nuts and let stand one day (covered). Roll out dough 1/2 inch thick and cut into fancy shapes. Bake on buttered cookie sheet in 400 degree oven until browned.

How to Make GERMAN GINGERBREAD | Original Recipe | Nürnberger Lebkuchen | Christmas Cookies
Ingredients:
200g orange peel
200g citron peel
250g ground almond
250g ground hazelnut
6 eggs
180g brown sugar
2 tsp honey
2 tsp cinnamon
1 tsp gingerbread spice
24 baking wafers (90 mm)
200g couverture
Preparation:
1. Step: Beat eggs, sugar and honey until they are nice and fluffy.
2. Step: Mix in the remaining dough ingredients.
3. Step: Spread the dough flat on the baking wafers. (makes about 30 pcs./90 mm or about 40 pcs./70 mm)
4. Step: Place on the baking tray lined with baking paper. Bake with top and bottom heat at 150°, about 20 minutes.
5. Step: After cooling, coat with chocolate glaze if desired.

For me, winter and holidays have to smell like spices: delicate cinnamon, bitter ginger, and rough cloves. That's why every year I must prepare gingerbread. And since I don't like that much those thin ginger biscuits, I prefer a German version, the one I consider the most authentic gingerbread cookie called Lebkuchen.
When I was a kid, I had a nice lady living next to my house and since she had German origins, from time to time, she used to bring me and my bother traditional cookies. And these gingerbread cookies were my favorite. What I like the most about them is that they are not very sweet and you can easily taste all the spices.
Lebkuchen is a traditional German gingerbread cookie, a cookie invented back in the 13th century in Franconia (Germany) by the monks. The most popular kind of Lebkuchen is one of Nuremberg known as Nürnberger Lebkuchen. History says there are two main types of Lebkuchen cookies: Honigkuchen (honey cake) and Pfefferkuchen (pepper cake).

Ingredients:
butter 85g.
honey 200g.
flour 200g.
almonds 100g.
baking soda 1/2 tsp.
baking powder 1 tsp.
cloves 5 pieces or 1/2 tsp.
cinnamon 1 tsp.
nutmeg 1/2 tsp.
ginger 1 tsp.
a pinch of salt
Glaze:
icing sugar 50g.
boiling water 2-3 tsp.
melted dark chocolate 50g.
Instructions:
1. Melt the butter and honey using a bain-marie.
2. In a separate bowl, mix the rest of the ingredients.
3. Once the butter and honey mix is melted, combine with the flour and spices mix.
4. Put the dough in the fridge and let to cool down.
5. Once ready, with the wet hands, form small balls and put them on a tin tray leaving enough space between them. You can also use a cookie cutter, but keep in mind that the dough thickness must be at least 1 cm. Otherwise, the cookies will get burnt easily.
6. Bake the gingerbread cookies in the preheated oven at 185°C for 15 minutes or until golden brown.
7. For the glaze, mix the icing sugar with the boiling water. You can add more or less water until you get the right consistency ( as in the video). For the chocolate cookies, melt the chocolate and cover one side of the cookie then let to rest.
