Dilli ka Saag Gosht
Lamb With Spinach
दिल्ली का साग गोश्त
Ingredients:
Vegetable Oil - 8 tbsp
Whole Black Peppercorns - 1/4 tsp
Whole Cloves - 6-7 ea
Bay Leaves - 2 ea
Cardamom Pods - 6 ea
Onions, peeled and finely chopped - 175g
Garlic Cloves, peeled and finely chopped - 6-8 ea
Ginger, peeled and finely chopped - 1 inch cube
Boned Meat from Lamb Shoulder, cut into 1 inch (2.5cm) cubes - 900g
Ground Cumin Seeds - 2 tsp
Ground Coriander Seeds - 1 tsp
Cayenne Pepper - 1/4-3/4 tsp
Salt - 2 tsp
Plain Yoghurt, well beaten - 5 tbsp
Fresh Spinach, trimmed, washed and finely chopped - 900g
Garam Masala - 1/4 tsp
Method:
1. Heat the oil in a large pot over a medium-high flame. When hot, put in the peppercorns, cloves, bay leaves, and cardamom pods. Stir for a second.
2. Now put in the onions, garlic, and ginger. Stir and fry until the onions. develop brown specks.
3. Now add the meat, ground cumin, ground coriander, cayenne pepper, and 1 teaspoon of the salt. Stir and fry for a minute.
4. Add 1 tablespoon of the beaten yoghurt. Stir and fry for another minute. Add another tablespoon of the yoghurt. Stir and fry for a minute. Keep doing this until all the yoghurt has been incorporated. The meat should also have a slightly browned look.
5. Add the spinach and the remaining 1 teaspoon salt. Stir to mix. Keep stirring and cooking until the spinach wilts completely.
6. Cover tightly and simmer on low heat for about 1 hour 10 minutes or until meat is tender.
7. Remove the lid and add the garam masala. Turn the heat to medium. Stir and cook another 5 minutes or until most (but not all) the water in the spinach disappears and you have a thick, green sauce.
N.B. - The whole spices in this dish are not meant to be eaten.

Palak Gosht
Recipe in English:
Ingredients:
- Mutton ½ kg
- Onion 3 medium sliced
- Tomatoes 3 medium chopped
- Salt 2 tsp or to taste
- Chili Powder 2 tsp or to taste
- Turmeric ½ tsp
- G/G paste 2 tbsp
- Cumin 1 tsp
- Whole spice Powder ½ tsp
- Lemon Juice 2 tsp
- Spinach 250 gms
- Dill eaves 2 tbsp
- Green Chilies 2-3
- Crushed Red Chilies 1 tsp
- Oil ½ Cup
- Fresh Coriander 2-3 tbsp
- Water 2 to 2 ½ Cup
Directions:
- Blanch spinach by bringing water to boil and adding chopped spinach and dill. Simmer it for 3 mins. Drain and leave 2-3 tbsp of water in it and Set aside.
- Add oil in a pan, add sliced onion and fry till translucent. Now add cumin and ginger garlic paste and meat and again keep mixing. When meat changes color, add tomatoes, salt, chili powder and flakes, turmeric and water and cover the lid, cook until meat is tender.
- Check occasionally.
- When all water is about to dry add spinach/dill and give good mix for 3-4 minutes.
- Add green chilies, lemon juice, garam masala powder and coriander and simmer for 2-3 minutes.
- Serve with Boiled rice or Roti.

Ajza:
- Mutton ½ kg
- Piyaz 3 medium sliced
- Tamatar 3 medium chopped
- Namak 2 tsp or to taste
- Lal Mirch powder 2 tsp or to taste
- Haldi ½ tsp
- Adrak lehsan paste 2 tbsp
- Zeera Sabit 1 tsp
- Garam masala Powder ½ tsp
- Lemon Juice 2 tsp
- Palak 250 gms
- Soya 2 tbsp
- Hari Mirch2-3
- Kuti Lal Mirch 1 tsp
- Tel ½ Cup
- Taza dhania 2-3 tbsp
- Pani 2 to 2 ½ Cup
Directions:
- Pani boil karina jab boil pe ajaye tu palak aur soya shamil kar ke 2-3 min chordain. Iske baad pani drain kardein sirf 2-3 tbsp pani rehne dein aur palak alag rakh dein.
- Pan main oil shamil karein aur is main piyaz shamil karein. Jab piyaz ka rang tabdeel hone lage to is main zeera aur gosht daal ke mix karein. Jab gosht ka colour badalne lage is main tamatar, namak, lal mirch, kuti mirch, haldi aur pani daal ke mix karein aur lid se dhaank ke gosht gal jane tak pakayen.
- Beech main check karte rahein.
- Jab pani khushk hone pe ajaye to is main palak/soya daal kar achi tarah 3-4 min k liye bhoon lein.
- Is main ab hari mirchein, garam masala powder, lemon juice aur hara dhania daal kar dum ke liye 2-3 min chhor dein.
- Boiled chawal ya Roti ke saath serve karein.
