How To make Lamb Stew
3 1/2 lb Lean lamb neck meat,
-cut in large cubes 2 Bay leaves
10 Whole black peppercorns
1 t Dried thyme leaves
1 T Salt
1 Clove garlic, peeled
-and crushed 3 c Water
3 md Carrots, peeled and
-thinly sliced 3 c Potatoes,cut into 1/2" cubes
6 T Flour
3/4 c Cold water
1. Place lamb, bay leaves, peppercorns, thyme, salt, garlic and the 3 cups
water in a deep, 3-quart, heat-resistant, non-metallic casserole. 2. Heat, covered, in Microwave Oven 5 minutes. 3. Skim any foam that may form. 4. Heat, covered, in Microwave Oven for an additional 25 minutes or until lamb is almost tender. Stir occasionally. 5. Add carrots and potatoes and heat, covered, in Microwave Oven 20 minutes or until lamb and vegetables are tender. Stir occasionally. 6. While lamb and vegetables are cooling, combine the 6 table- spoons flour and 3/4 cup water in small bowl. 7. Remove bay leaves and peppercorns from stew. 8. Gradually stir flour mixture into stew and heat 3 minutes or until sauce is thickened and smooth. Tip: Boneless lamb may be used, however, reduce quantity of meat to 2 1/2 pounds and decrease cooking time in Step 4 to 15 minutes.

The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat.
Lamb is becoming a more fashionable red meat as it’s a healthier meat as it contains many vitamins, minerals and B12. Try and buy grass fed and it will also have the heart healthy omega 3 fatty acids.
But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour.
A complete meal because it has carrots, peas, potatoes all built in. The best part is that it will taste even better the next day, so make a big pot. It’s also easy to freeze for ready made meals when you’re short on time. I usually place them in glass storage containers and then microwave them or add a splash of water in a saucepan and reheat on very low heat.
For the wine, make sure you buy a full bodied wine, like a shiraz or cabernet sauvignon. Do not go crazy on the price but don’t skimp either, the quality of the wine will affect the sauce. It is a red wine sauce after all.
As an option, I like to serve it with a crusty toasted bread, rubbed with a clove of garlic for that extra flavour. This is of course optional. Sprinkle some freshy chopped parsley or you can even use the celery leaves to add colour and freshness before serving.

Ingredients:
1. Oil ½ Cup
2. Pyaz (Onion) Sliced 3-4 large
3. Mutton 1/2 Kg
4. Lehsan (Garlic) Chopped 1 Tbs
5. Adrak (Ginger) Chopped 1 Tbs
6. Sabit Lal Mirch (Red Chili Whole) 4-6
7. Badi Elaichi (Black Cardamom) 1-2
8. Daar Chini (Cinnamon) 2 Sticks
9. Kali Mirch (Black Pepper) 8-10
10. Zeera (Cumin Seeds) ½ Tsp
11. Tez Paat (Bay Leaf) 1
12. Laung (Cloves) 6-8
13. Lal Mirch (Red Chili) Crushed 1 & ½ Tsp Or To Taste
14. Namak (Salt) 1 Tsp Or To Taste
15. Dhania Powder (Coriander Powder) 1 Tsp
16. Haldee (Turmeric) ½ Tsp
17. Tamatar (Tomatoes) Chopped 2-3
18. Pani (Water) 2 Cups
19. Dahi (Yogurt) ½ Cup
20. Garam Masala Powder (Whole Spice Powder) ½ Tsp
21. Hari Mirch (Green Chilies) 1-2 Chopped
22. Adrak (Ginger) Julienne 1 Tbs
Directions:
- Heat oil in a pot and add onion and fry them until light brown on low flame.
- Add mutton, ginger and garlic and fry for 2-3 minutes.
- Add spices from 6-16 and give it a good mix. Add tomatoes and mix well. Tomatoes are added for color.
- Add 2 cups of water and mix. Cover and cook until meat is tender on low flame. (You can additional water to tenderize meat)
- Add yogurt and cook until water dries and oil separates.
- Sprinkle whole spice powder. Garnish with green chilies.

-Pani shamil karein aur mix kerlein.Dhak ker ghost gul janay tak pakayen.
-Dahi dalein aur tez ancch per paka lein yahan tak k pani sukh jaye aur oil alag ho jaye.
-Garam masala podwer chirak dein.Hari mirchein dal ker garnish karein.
