How To make Kutia (Ukrainian Traditional)
2 c Wheat
3 qt Water
1 c Poppy seeds
2/3 c Sugar
1/3 c Honey (dissolved in 3/4 cup
-hot water) 1/2 c Chopped walnuts
1 Apple cut into 1/4 inch
-squares This is the ritual first dish of the 12 course Christmas Eve Supper. The wheat represents the staff of life, the honey represents the Spirit of Christ Dry wheat in 250 degree oven for one hour, stir occasionaly. Wash, soak in cold water overnight. Next morning, bring wheat to boiling point, simmer for 3 - 4 hours, until kernels burst open. Scald poppy seed, simmer for 3 - 5 minutes. Drain, grind twice using the finest blade of food chopper. Set aside. Combine honey and sugar in hot water. Set aside. After all ingredients have cooled, combine in one bowl and add the chopped apples (if desired). This dish is to be served cold and will not keep well at room temperature. Store in fridge until ready to serve. Ukrainian porridge you've NEVER TASTED! [KUTIA]
Today we show you how we made a traditional porridge and uzvar which are popular in Ukraine, Poland and other parts of Eastern Europe.
Crispy walnuts, soft raisins, dried fruits and the main ingredient are enveloped in honey, and grated poppy seeds give a special taste to this dish.

Ingredients
● 2 1/4 dried apples and pears (200 g)
● 2 cups wheat grains (250 g)
● A pinch of salt
● 3/4 cup raisins (100 g)
● 1/2 cup dried apricots (100 g)
● 3/4 cup dried cranberries (100 g)
● 3/4 cup poppy seeds 100 g
● Sugar 1 tsp
● 1 cup walnuts (100 g)
● 1/2 cup honey (200 g)

Step by Step Recipe:
1. Rinse dried fruits and boil for 30 minutes
2. Rinse the wheat and leave to soak for ≈ 5 hours
3. Put the wheat on high heat, salt and cook for 30 minutes
4. Add uzvar to the cooked wheat
5. Pour boiling water over raisins, dried apricots, dried cranberries, poppy seeds and walnuts
6. Chop dried apricots and walnuts
7. Add raisins, dried apricots, poppy seeds and walnuts to wheat and fill with honey
8. Soak poppy seeds and crush in a mortar with sugar or grind in a blender (Sugar is needed to crush seeds easier)
9. Add it to kutya. Mix well everything
