How To make Kifli(Hungarian Walnut Cookies)
DOUGH:
4 3/4 c Unsifted all-purpose flour
2 c Butter or margarine
4 lg Egg yolks, slightly beaten
1 c Sour cream
FILLING:
1 1/4 lb Shelled walnuts (about 5
Cups), ground 1 c Granulated sugar
1/2 c Milk
1 tb Almond extract
GLAZE:
1 lg Egg, beaten
Confectioners' sugar
Make dough: in a large bowl, place the flour and the butter. Using a pastry blender or two knives, cut the butter into the flour until the mixture resembles coarse crumbs. Add the egg yolks and sour cream; stir with a fork until combined. Turn the dough out onto a lightly floured board or pastry cloth. Knead the dough with your hands until it is smooth and can be shaped into a ball. If dough is too sticky, knead in more flour. If desired, wrap dough in plastic wrap and refrigerate. Make filling: in a medium-sized bowl, place the ground walnuts, granulated sugar, milk and almond extract. Using a wooden spoon, stir in walnut mixture until ingredients are thoroughly combined. Prehead oven to 400F. Grease baking sheets with solid vegetable
shortening. To shape Kifli: divide the dough into quarters; wrap three of the quarters separately in plastic wrap and set aside. On a lightly floured surface, roll out the remaining quarter of the dough to a 15" x 12" rectangle that is 1/8" thick. Using a pastry wheel, cut the rectangle of dough into 3-inch squares. Place a heaping teaspoon of the walnut
filling in the center of each square; bring one corner of the dough over the filling to the opposite corner; pinch edges together. Place Kifli on baking sheets; brush with the beaten egg. Bake for 10 minutes or until cookies are golden brown. Remove from the baking sheet. Fill the bottom of a pie place with confectioners' sugar. Roll Kifli in the sugar. Let cool on wire racks. Ingredients:
- 70 grams of walnuts
- 120 grams of butter (8 tablespoons)
- 1/5 teaspoon salt
- 50 grams of powdered sugar (1/3 cup)
- 1/2 teaspoon vanilla extract

Bake in preheated 350°F (180°C) oven / 18 minutes.

Kifle, Slovenian Recipe
Kifle or Rogljički with 3 different fillings: apricot jam, walnuts and cottage cheese. A favorite anytime of the day.
DOUGH
2 1/2 CUP FLOUR 1/2 TSP SUGAR 1 1/2 TSP YEAST 1/2 CUP MARGARINE 1/2 CUP SOUR CREAM 2 EGG YOLKS 1/8 TSP SALT 1/3 CUP WARM WATER
FILLINGS
APRICOT FILLING: APRICOT JAM CHEEZE FILLING: 1 TBSP FETA CHEEZE 3 TBSP COTTAGE CHEEZE 2 TSP SUGAR WALNUT FILLING: 1 TSP VANILLA 3/4 CUPS CHOPPED WALNUTS 2 TSP SUGAR
DIRECTIONS:
Dissolve the yeast in the water with and sugar and let it rise for 10 min.
In a bowl combine sifted flour, yeast. Cut in margarine. Add salt, egg yolks and sour cream; mix well. Form into a ball. Wrap and chill in refrigerator at least 1 hour.
Combine walnuts, sugar and vanilla extract. Blend in mixer. If to dry add more vanilla or a few drops of water. Set aside. Combine feta and cottage cheese and sugar. Mix and set aside.
When dough ready, cut in three and roll into a rectangle. Cut into wedges. Fill wide end of each wedge with 1-2 tsp of filling. Roll up from wide end to point. Place on greased baking sheet, curving ends.
Bake at 350 degrees F for 25 minutes.
Dust with powdered sugar.

I invited my sister-in-law over to learn how to make Kifli. I was taught by my mother years ago. They are so delicious and a family staple to make around Christmastime with Almond being the most requested flavor! HUNGARIAN KIFLI:
1 stick Crisco Shortening
2 sticks Softened Butter
3 Egg Yolks
3 Tbsp Sugar
16 oz Sour Cream
1 packet Active Dry Yeast
4 cups Flour
Mix together well and refrigerate dough overnight.
Rollout each pastry cookie and Bake at 350° for 10-12 minutes or until golden brown.
*Extra flour to roll out cookies and extra sugar to coat cookie when done baking.*
