MEAL INGREDIENTS:
1. OPEN TOP PIE:
Puff Pastry
Pesto
Sun dried Tomatoes
Cheese
Salad
2. SAUSAGE & FENNEL RISOTTO
Sausages
Fennel
Risotto Rice
Garlic
1000ml Veg Stock (add more if needed)
3. CHICKEN TRAY BAKE
Chicken
Potatoes
Peppers
Courgette
200ml Veg Stock
Paprika
4. CREAMY ASPARAGUS PASTA
Pasta
Garlic & Herb Soft Cheese
Asparagus
Lemon
100ml Veg stock (add more if needed)
5. BEEF BURRITO:
Beef mince
Wraps
Cheese
Fajita Mix
TO MAKE THE TOMATO SAUCE (double up to make extra to freeze)
1 onion
3 cloves garlic
1 stock cube
2 Peppers
1 can Sweet Peppers
1/2 teaspoon chilli
500ml water
(you can add any veggie you have left over, I tend to only use red or orange and not green, otherwise your sauce will turn green.. but it will still taste delicious)
6. EGG FRIED RICE
Eggs
Rice
Bacon
Peas
Soy Sauce

INSTANT POT I USE:
RECIPES & INGREDIENTS:
Chicken fajitas:
500g chicken
Wraps
Salsa
Fajita seasoning sachet
Avocado
2 x peppers
Red onion
Cheese
Tomato soup:
4 beef tomatoes
300g cherry tomatoes
300g sundried tomatoes
2tbsp tomato purée
1 pepper
1 white onion
1 tin chopped tomatoes
2tbsp sundried tomato paste
1 jar sweet peppers
3 garlic cloves
600ml veg stock
1tbsp oregano
Salt & pepper
Spag Bol:
500g beef mince
Spaghetti bolognese sachet
400g spaghetti pasta
300ml tomato soup mix
Salmon & noodles:
Half side salmon
3 portions egg noodles
2 portions rice noodles
4tbsp sesame oil
4tbsp soy sauce
2tsp ginger granules
2tsp ginger granules
3 limes juiced
Broccoli

AIR FRYER I USE:
RECIPES & INGREDIENTS:
Salmon wrap: puff pastry, Salmon fillet, 80g frozen spinach, 1/4 veg stock, 40g soft cheese, salt & pepper, milk or egg for brushing
Chicken burger: chicken breast, 1tsp paprika, 1tsp garlic granules, crushed cornflakes, Burger bun, lettuce, sauce of choice
gnocchi bake: gnocchi, 100g premade pasta sauce, 60g blue cheese, salt & pepper
PREPPED PASTA SAUCE:
cauliflower bites: cauliflour head, 6tbsp sesame seed oil, 6tsp soy sauce, 1tsp lazy garlic, 1tsp ginger powder, 2tbsp honey or maple syrup, 1tsp lemon grass puree, 1tbsp corn starch, sesame seeds
Baked caramel egg: Carael creme egg, puff pastry

Today I am sharing this delicious and hearty pressure Coker beef stew. Now the evenings are getting longer, there is nothing better than knocking together a super quick and healthy stew which the whole family can dive into before and after their various clubs.

500g beef, cut into bite-sized pieces
400ml beef stock
2 large potatoes - diced
2 large carrots - diced
2 celery sticks - diced
1 onion - diced
