The Johnny Appleseed of the Jewish Bakery on Joseph Avenue
Transcript: That was the uncle I was named after, Victor, and he was a master cake maker, baker. And he was hired by the Jewish bakery out of New York City, and they made bakeries at different locations throughout the United States. So he was like the Johnny Appleseed, he came to Rochester, helped with the opening of the New York Bakery, which Joseph Avenue was predominately Jewish back in the 30s, and 40s, and early 50s, so he opened up the bakery, helped open up the bakery there. Then my father came to work at the bakery; they all came here because they needed work, employment, and they wanted a better life. - Victor Burgos

Reviving the 1839 recipe for Apple Sass and Apple Butter. We made it with a variety of cultivars as well as Malus sieversii, from the old growth forests of Central Asia.

Johnny Appleseed Makes Simple Apple Pudding, early 1800s
A fictional reenactment by Ken Kramm in celebration of Johnny Appleseed Day, 26 September 2015. Johnny Appleseed (John Chapman 1774-1845) was an eccentric frontier nurseryman who established orchards throughout the American Midwest. Fruits from his orchards were typically used for cooking and cider. Johnny was well known for business skills, kindness, generosity, conservation, animal rights, religious beliefs, and subsistence lifestyle. He wore used clothing, was often barefoot, and usually slept in the open forest. Johnny looked upon all of nature as his friend.
In this video I make boiled apple pudding. This was a typical meal for soldiers, travelers and persons of low means during the 18th century. It is likely that Johnny Appleseed ate this meal.
One apple
Two cups flour
Two tbs cinnamon sugar mixture (optional)
Water
Cotton or linnen cloth 18 x 18 inches
Molasses (optional)
Put cloth in boiling water. Cut apple in half and remove seeds. Add water to 1-1/2 cups flour to make thick paste. Cover apple in paste. Dust cloth with dry flour. Tie cloth around apple and put in boiling water. Remove apple/cloth after 1-1/2 hours. Allow pudding to cool before serving. Add molasses (optional).
I was surprised that this simple apple pudding was very good. It was much sweeter than expected. I highly recommend trying it.

Yellow ???? Yam Fruit Cake ????
Ingredients and preparation
2 cups flour
2 cups sugar (white or brown)
2 cups butter
2 cups grated yellow yam ????
2 tsp baking powder
6 eggs
4 cups soaked blended fruits
2 tbsp rum
1/2 cup fruit wine
3/4 cup browning
1 tbsp Vanilla
1 tsp salt
1 tsp mixed spice
1 tsp nutmeg
1 tsp Cinnamon
Cream butter and sugar.
Beat eggs thoroughly and add to the creamed butter and sugar.
Add flour 1 cup at a time (sifted flour).
Add baking powder and salt.
Add 2 cups grated yellow ???? yam
Stir in blended fruits, mixed spice, nutmeg, cinnamon, vanilla, rum, wine and browning until you get a smooth paste.
Bake350 degrees.
