How To make Jerked Pork and Mushroom Stack

1 lb pork tenderloin,
trimmed
: fat 4 Portobello mushrooms, :
: stems removed, cleaned 1 ts roasted garlic
4 TB olive oil
1 TB Paul Prudhomme's Vegetable
: Magic 2 TB Paul Prudhomme's Pork and
: Veal Magic 2 TB wet jerk seasoning
3 TB dry jerk seasoning
1 pt heavy cream
1 ts ground coriander
1 ts ground allspice
1 TB Worcestershire sauce
2 TB unsalted butter
: Salt 2 c cooked rice
2 TB green onions, -- thinly
: sliced Pre-heat the oven to 250 degrees. Slice pork into 4 equal pieces, place each piece between sheets of plastic wrap and pound thin. Rub the mushrooms with roasted garlic, some of the olive oil and season with Vegetable Magic and the Pork and Veal Magic. Rub the pork with the wet jerk seasoning, sprinkle with 2 tablespoons of the dry jerk seasoning, and then dip the pork into a dish of the remaining olive oil. Heat a large saute pan until almost smoking, lay the slices of pork in the pan and sear about 40 seconds on each side. Remove the pork to an oven proof dish. Add the mushrooms to the saute pan and saute them about 1 minute per side, or until softened. Then put the mushrooms in the dish with the pork and keep them warm in the oven. In the same saute pan pour the cream and add the coriander, allspice, the remaining dry jerk seasoning, and the Worcestershire sauce. Reduce until the sauce thickens and then stir in the butter. Season with salt, if necessary. Put 1/4 of the rice on each serving plate, put a slice of pork on the rice, top with a mushroom and spoon the sauce over the top. Pepper Steak Recipe:
Ingredients:
1 lb flank steak, sliced thinly
1 red bell pepper, sliced up
1 green bell pepper, sliced up
1/4 onion, sliced up
2 tsp garlic, minced
1 tsp ginger, minced
1/4 cup soy sauce
1 1/2 tbsp sugar
1 1/2 tbsp cornstarch
1/4 cup of water
1/4 cup cooking oil, for divided use
Add red pepper flakes (optional)
Add salt and pepper to taste
* Serving 2-3 people

Stacked “Porketta” Sandwich I Marcus Meacham
You can't go wrong with piles of pork belly and pork shoulder. Especially piled onto sandwiches!
INGREDIENTS:
1 pound pork belly
Salt, to taste
Pepper, to taste
2 pounds pork shoulder, cut into baseball-sized chunks
1/2 white onion, chopped
9 cloves garlic
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 tablespoons oregano
1 cup white wine, divided
5 cups vegetable stock
1 bunch rapini
1 cup red wine vinegar
For assembly:
3 large brioche buns
Lemon garlic aioli
1 block white cheddar, cut into random chunks
STEPS:
1.) Pork belly: score the fatty side of the belly and rub with salt and pepper. Place on a baking sheet lined with a wire rack and roast at 450°F for 30 minutes. Drop the temperature to 250°F and continue roasting for an hour and fifteen minutes. Let rest for 10-15 minutes before slicing.
2.) Pork shoulder: in a hot, oiled Dutch oven, sear baseball-sized pieces of pork on all sides. Remove from pan. Add half of your chopped onion and 5 cloves garlic and cook until translucent. Add fresh rosemary, thyme and oregano. Reglaze with 1/2 cup white wine, then add pork back to the pan. Cover with vegetable stock, reserving some for the rapini. Cover pot with lid and let simmer for 1 hour until pork is fork tender.
3.) Rapini: sweat remaining onion and garlic until translucent; season to taste with salt and pepper. Once spices are fragrant, fold in rapini. Season with salt and pepper and add remaining vegetable stock, remaining white wine and vinegar. Simmer until greens are tender, 30-40 minutes. Once tender, season with the zest and juice of one lemon. Remove from heat and roughly chop.
4.) To assemble: spread lemon garlic aioli on bottom bun. Add cheddar chunks, then pork shoulder, then rapini, then 3 pork belly slices and more rapini. Spread lemon garlic aioli on the top bun and place on top. Enjoy!
