How To make J. L.Hudson's Cheese Bread
1 cup Warm water
1 Envelope quick rise dry yeast
1 teaspoon Sugar
3 1/2 cups Flour
2 teaspoons Salt
5 1/2 cups Sharp cheddar
grated
2 large Eggs :
beat
1 Egg -- beat
2 tablespoons Milk
In a 16-oz measuring cup combine warm water, yeast and sugar. Give it a stir and let it stand until it bubbles to the rim of the pitcher (5 or 6 minutes). Meanwhile mix together flour, salt and cheese. Work in 2 eggs and the yeast mixture until dough can be kneaded in bowl with floured hands, 6 to 8 minutes. When smooth and elastic, let dough rice in greased bowl, covered, 1 hour. Punch down and let rise again. Shape to fit greased 9" Pyrex loaf dish. Wipe top of loaf in mixture of 1 egg and 2 TB milk. Let rise until doubled. Bake in preheated 375~ oven about 45 minutes or until nicely browned. Remove from pan. Cool before slicing. Source: Gloria Pitzer's Newsletter.

The J. L. Hudson Company (commonly known simply as Hudson's) was a upscale retail department store chain based in Detroit, Michigan. Hudson's flagship store, on Woodward Avenue in Downtown Detroit (demolished October 24, 1998),[1] was the tallest department store in the world in 1961,[2] and, at one time, claimed to be the second-largest department store, after Macy's, in the United States, by square footage.

For generations of Detroiters, the J.L. Hudson's department store in the heart of downtown was more than an incredible shopping experience, it was a landmark. Whether you went there at Christmas to see Santa, or to buy your first good suit, Hudson's was as much a part of Detroit as the auto industry. Among the many recollections people have, are the wonderful things Hudson's offered in their restaurants. The Canadian Cheese Soup was a longtime favorite on the Hudson's menu, and making it again took us back to those wonderful days on Hudson's 13th floor. This is part 1 of 2 in remembering J.L. Hudson's - in part 2 of 2 we recreate the department store's famous Maurice salad.
Puttin' on the Spritz! Making Spritz Cookies for the Holidays!
Spritz cookies have been a favorite in our family for generations. I remember mom making these along with many other holiday cookies and we like to continue the tradition. These cookies are light, buttery, and have a wonderful almond flavor (I use almond extract, but lemon and vanilla are also nice).
1 cup (2 sticks) unsalted butter, softened
1/2 cup sugar
2 1/4 cups all-purpose flour
1/2 tsp salt
1 egg
1 tsp almond extract (you can use other flavoring if you prefer)
*note - if you want to add color to the dough, you can add the food coloring at the end of the mixing process.
Pre-heat oven to 400 degrees.
Cream butter and sugar together with electric mixer until light and fluffy.
Add egg and beat in. Add flour, salt and extract. Mix until well combined.
The batter will be stiff.
Put dough in a cookie press with your preferred die and push out into shapes on an ungreased cookie sheet. If decorating with colored sugars or sprinkles, apply before you put cookies in the oven.
Bake 6-9 minutes until cookies are firm but not browned on the top. It's fine if they are lightly browned on the bottoms.
Remove from oven and immediately transfer to cooling rack.

JL Hudson started a modest store in Detroit in 1881 and made it grow into a behemoth that stood a whopping 25 stories tall and took up a whole city block! And with 5 restaurants, you could stay from opening till closing and never miss a meal. So, get out your soup pot, and let's bring back a little bit of the glory days of Hudsons!
What you'll need:
4 T Butter
1 T Diced Onion
1/2 c Diced Celery
1/2 c Diced Carrot
1/2 c All-Purpose Flour
1 T Cornstarch
1/8 tsp Paprika
1/8 tsp Baking Soda
3 c Whole Milk
3 c Chicken Broth
2 lbs Sharp Cheddar Cheese
2 drops Angostura Bitters (optional)
Salt and Pepper
Parsley for garnish (optional)
