How To make Italian Spinach Ricotta Quiche
1 unbaked 9 inch pie shell
1 tablespoon butter
1 cup minced onion
1 package frozen
chopped (10 oz.)
spinach :
thawed 15 ounces Ricotta cheese
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon nutmeg
1/4 cup grated Parmesan cheese
Heat oven to 400 degrees. Prick shell and bake for 15 minutes. Remove from oven . In a frying pan, melt the butter. Add the onions and cook until soft. Squeeze the spinach to remove the moisture and add to the onions and stir. Remove from heat. Add remaining ingredients in a large bowl and mix well. Add spinach and onion mixture and mix well. Pour into baked shell. Bake at 350 degrees for 40 t o 45 minutes or until top is golden brown. Serves: 6 to 8. Recipe from "One Mil lion Recipes CD"

Easy Spinach Quiche
Ingredients:
* 3 sheets (6 squares) of puff pastry
For the filling:
* 1.5 packets of heavy cream (300 ml)
* 1 egg
* 100g grated kashar cheese or any cheese you like
* 2 handfuls of spinach leaves (frozen, 450g)
* 1 large sweet red pepper (capia pepper)
* Salt
* Black pepper
Instructions:
* Thaw 3 sheets of puff pastry at room temperature for about 10-15 minutes.
* Lightly flour your work surface and stack the horizontal edges of the puff pastry sheets on top of each other. Roll them out with a rolling pin to be slightly larger than your tart pan. (I used a 26 cm pan.) Place the rolled-out pastry in the pan, trimming any excess hanging over the edges. Optionally, you can place some of the excess pastry in the center of the tart.
* Spread 450g of frozen spinach over the puff pastry. Add finely chopped sweet red pepper, a portion of the grated kashar cheese, cheddar or any cheese you like, a pinch of black pepper, and a pinch of salt. Mix all the ingredients together.
* In a bowl, whisk together 1 egg, 1.5 packets of heavy cream, and a pinch of salt and black pepper. Pour this mixture over the spinach filling, then sprinkle the remaining grated cheese on top.
* Preheat the oven to 200°C (392°F) with both top and bottom heat, without the fan. Place the tart on the very bottom of the oven and bake for 30-35 minutes. Then, move the tart to the middle rack and bake for an additional 25-30 minutes, for a total baking time of about 1 hour.

500 g spinach
500g ricotta cheese
1 chopped onion
1 large egg
1tsp salt
1/4 black pepper
100 g grated Parmesan cheese
Puff pastry for the base
Directions:
Heat the oven to 180 degrees
Prick the pie crust and bake for 15 minutes
Remove from the oven .
Wash and steam the Spinach
After steaming ,squeeze to remove the excess water.
Stir fry the onions till translucent brown .
Add the spinach and stir fry for only 1 minute.
Put in the blender all the ingredients and blend it according to your desired texture of the quiche.
Pour into bake crust.
Bake at 350F/180 Deg for 30 minutes or until cook .
