Ingredients:
1 packge (500g) spaghetti or other pasta of your choice
1 lb (450g) ground beef
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, minced
2 tablespoons tomato paste
22oz (625g) tomato sauce
600ml water
2 tablespoons olive oil
1/4 bunch parsley, chopped
1½ teaspoons salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
Directions:
1. Heat olive oil in a large pan. Add ground beef and brown the beef over high heat, stirring occasionally.
2. Add chopped onion, chopped red bell pepper and minced garlic. Cook, stirring occasionally, until soft.
3. Add tomato paste, cook for 2 minutes, stirring frequently. Add tomato sauce, fill the tomato can with water and pour to the pan. Stir well.
4. Bring to a boil, reduce the heat to low and simmer for 40 minutes, until thickens. Season with salt, black pepper and dried oregano. When the sauce is ready add chopped parsley, stir and turn the heat off.
5. Cook the pasta according to package directions.
6. Serve the sauce over hot pasta.

Gennaro Contaldo's Classic Italian Ragu Bolognese | Citalia
One of Italy’s most versatile sauces is the ragu Bolognese. Originating in the Emilia-Romagna region, this rich and delicious sauce can be used for a variety of dishes.
There are many versions of this recipe but Gennaro Contaldo’s authentic recipe shows you how to make a simple and flavoursome sauce, using far fewer ingredients than you may have been expecting. You will see that instead of tins of tomatoes, for example, Gennaro uses a small amount of concentrated tomato puree, diluted in stock, making the sauce lovely and rich but not overly tomato-y. In fact, it is the good quality mince used in the recipe which is the star of the show.
Gennaro’s recipe is simple to make and as it is slow-cooked over a gentle heat for at least two hours, it is a relatively effortless recipe to pull together, allowing you to get on with other things as the house fills with the delicious smell of Italian cooking.
Gennaro’s top tip is to make more than you need and then freeze the excess in batches, ready to be used another time in a tagliatelle Bolognese or hearty lasagne.

Ingredients
4 x servings
45ml extra virgin olive oil
25g butter
1 x onion, finely chopped
1 x celery stalk, finely chopped
1 x carrot, finely chopped
150g pancetta, cubed
200g minced beef
200g minced pork
200ml red wine
2 x tablespoons double-concentrated tomato puree'
200ml stock
Method
Heat the extra virgin olive oil and butter in a pan, add the onion, celery, carrot and pancetta and sweat on a gentle heat for about 10 minutes until the onion has softened. Add the meat and brown all over. Increase the heat, add the wine and allow to evaporate. Dilute the tomato puree in a little of the stock and stir into the meat.
Reduce the heat to low, cover with a lid and cook on a gentle heat for 2 hours, checking and adding a little extra stock from time to time to avoid the sauce from drying out.
Italian Grandma Makes Bolognese Sauce
BOLOGNESE SAUCE
3-4 tablespoons Extra Virgin Olive Oil
1 cup chopped yellow onion
1 cup chopped carrots
1 cup chopped celery
Salt (about 3 teaspoons)
Black pepper (about 1 teaspoon)
1½ pounds ground beef (lean 95/5)
½ pound ground pork
1 cup dry red wine
6 ounces tomato paste
1 quart peeled tomatoes
1 quart tomato puree
¼ cup fresh basil
1 cup whole milk
1 pound wide fresh pasta noodles such as Pappardelle
¼ cup grated Pecorino Romano Cheese

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
