How To make Irish Stew
2 tb Oil
4 lg Onion cut in wedges
5 lg Carrots cut in thick slices
2 Rib celery sliced
1 1/2 lb Round steak or lamb
6 lg Potatoes
1 c Water
Salt and pepper to taste Heat oil in large saucepan or skillet. Saute onions in oil. Add carrots and celery and cook for a few minutes. CUt steak into 1/4 to 1/2 inch cubes and add to onions, carrots and celery. Wash, peel and slice potatoes and add to pot. Pour in water, season to taste with salt and pepper and bring to a boil. Skim of any foam, reduce heat and simmer over low heat until meat and vegetables are tender. NOTE: Can also cook in crockpot on low overnight, 7-8 hours, or on high for 3 4 hours. If desired, stew can be thickened by mixing 2 tablespoon flour
with a little water and adding it to the stew. Heat through until thickened and serve piping hot.

The recipe -
Serves 4
1-2 lb boneless leg of lamb, cut into 1 inch pieces
1/4 cup vegetable oil
4 large carrots, peeled and cut into 1 inch chunks
2 large onions, peeled, halved and sliced
3 large parsnips, peeled and cut into 1 inch chunks
1 rutabaga (swede) peeled and cut into cubes
2 sprigs fresh thyme
2 cups (about 10) small gold potatoes, cut in half
2 quarts lamb broth (or chicken or beef broth)
salt and pepper to taste
1/4 cup fresh chopped parsley
Add the oil to a large pot and heat until smoking. Carefully add the lamb and stir until brown. (drain off the fat - optional)
Add the vegetables and stir (don't add the potatoes until half way through cooking)
Add the thyme and broth, cover with a lid and simmer for 1 hour or until the meat is tender. Season with salt and pepper and serve.
Garnish with the chopped parsley.

How to Make Irish Stew
A simple stew made with wine, lamb or mutton, and some vegetables such as carrots and potatoes that you can enjoy for Christmas and New year
Ingredients:
- 700 grams of lamb or mutton
- 1 can of Guinness
- 7 pieces of Russet Potatoes cut into chunks
- 5 medium-sized Carrots (chopped)
- 1 tbsp of chopped Parsley - for garnishing.
- 2 tbsp of Tomato paste
- 750 ml of Lamb broth
- 2 tbsp of Worcestershire sauce - for more taste and color.
- 4 tbsp of vegetable oil.
- 1 tsp of Black pepper powder.
- 1 and 1/2 cup of chopped Onions
- 2 chopped Celery sticks
- 3 minced Garlic cloves
- 1/2 tsp of Salt
- 4 sprigs of fresh Thyme.
- 2 Bay leaves
