How To make Individual Party Pizzas
8 oz Fresh Italian sausage
1 T Olive oil
1 md Onion, chopped
1 Garlic clove, minced
1 cn Plum or whole tomatoes,
-broken up (16 oz) 1 t Dried basil leaves, crushed
1 t Dried oregano leaves,
-crushed 1/2 t Salt
1/2 t Dried rosemary leaves,
-crushed 4 oz Pepperoni, thinly sliced
1 sm Green or red bell pepper,
-cut into 1/2" pieces 1 sm Onion, coarsely chopped
1/4 lb Fresh mushrooms, sliced
1 cn Sliced ripe olives, drained
1 cn Marinated, quartered
-artichoke hearts, drained -and halved (6 oz) Crushed dried red pepper 3 c Shredded mozzarella cheese
1/4 c Grated Parmesan cheese
PIZZA CRUST DOUGH:
3 c Flour, divided
1 pk Fast-rising dry yeast
1 t Sugar
1/2 t Salt
1 c Warm water (105'F.-115'F.)
2 T Olive oil
Cornmeal Prepare Pizza Crust Dough. Remove and discard casing from sausage. Heat small skillet over medium heat until hot. Crumble sausage into skillet. Cook, stirring to separate meat, until no pink remains. Pour off drippings; set aside. Heat oil in medium skillet over medium-high heat. Add medium onion and garlic; cook and stir until onion is soft. Add tomatoes, basil, oregano, salt and rosemary. Reduce heat to low; simmer, uncovered, 30 minutes, stirring occasionally. Cool. Preheat oven to 425'F. Spread an equal amount of sauce over each prebaked crust. Divide sausage and 1/2 of pepperoni over crusts. Place green pepper, small onion, mushrooms, olives, artichoke hearts and crushed red pepper evenly over crusts as desired. Top with remaining pepperoni and cheeses. Place pizzas on baking sheets; bake 12-14 minutes or until heated through. PIZZA CRUST DOUGH: Combine 2 1/2 cups flour, yeast, sugar and salt in large bowl. Add water and oil; beat with electric mixer at low speed 1 minute. Beat at high speed 3 minutes. Stir in enough of remaining 1/2 cup flour to form soft dough. Turn out onto lightly floured surface. Knead 8-10 minutes or until dough is elastic. Place in lightly greased bowl; turn to coat. Cover; let rise in warm place until double in bulk, about 45 minutes. Punch down dough; divide into six pieces. Cover; let rest 10 minutes. Roll each piece of dough into a 7" circle; prick several times with fork. Cover; let rest 10 minutes. Preheat oven to 425'F. Generously grease two baking sheets; sprinkle with cornmeal. Place pizzas on baking sheet; bake 8-9 minutes or until golden brown. Cool on wire racks. Makes 6 7" crusts. * 525g (3ups) bread flour (substitute with all purpose flour)
* 6g (2 teaspoons) instant yeast
* 10g (3 teaspoon) sugar
* 9g (1 ½ teaspoon) salt
* 3 tablespoons oil
* 1½ cup water (375ml)
TOPPINGS:
* 200g ground beef seasoned with
* 1/4 teaspoon each of:
* salt
* Garlic
* Onion
* Pepper
Chicken:
* 1 chicken breast(cubed) Seasoned with:
* 1/2 teaspoon each of
* Salt
* Garlic powder
* Onion powder
* Crushed Bullion cube (knorr)
* Paprika
Other toppings
* chicken hotdog
* Bacon
* Red, green and yellow Bell pepper
* (Add and remove vegetables according to preference)
* Mozzarella cheese
* 1/2 cup pizza sauce
How to make Pizza sauce
* 1 cup tomato sauce
* 1/4 cup ketchup
* 1/4 tablespoons salt (pinch)
* 1 teaspoon oregano
(Add all ingredients in a small pot and cook for 5-10 minutes on medium-low heat)

Makes 12 to 13 mini pizza
Ingredients
*1.5cups all purpose flour/plain flour
*2tbsp powder milk
*1tbsp sugar
*1tsp salt
*1tsp instant yeast
*1/4tsp baking powder
*1.5tbsp oil
*Lukewarm water,as required
*pizza sauce
*topping as you like
*Mozzarella cheese
*Dried oregano

You’ll need
200 ml warm milk
120 ml warm water
100 ml oil
2 tsp granulated sugar
10g instant yeast
3 ¼ cup all-purpose flour
1 tsp salt
For the sauce:
Tomato sauce
Thyme
Toppings:
Sausages
Pepperoni
2 long green peppers
Mozzarella cheese
Olives
1 cup = 240 ml
Here’s how
1. For the dough, place 200 ml warm milk, 120 ml warm water, 100 ml oil, 2 tsp sugar and 10g instant yeast in the large bowl. Mix together using a spoon.
2. Add half of the flour and 1 tsp salt, knead until the dough begins to form. Continue to knead, bringing in the rest of the flour. Keep kneading until you have a smooth, springy, soft dough.
3. Cover the dough with plastic wrap and then, with a kitchen towel and let rise in a warm place until doubled in size, about 30 minutes.
4. Meanwhile, prepare your desired toppings.
5. Remove the plastic cover, punch the dough down and turn it out onto a work surface.
6. Knead for another minute so it deflates a bit. Flatten it with your hands and roll it out into a rough circle. Try not to roll too thick as it will keep rising until you put it in the oven.
7. With a round cutter, or a glass, cut the dough into rounds.
8. Lay the bases on baking sheet lined with parchment paper.
9. Do the same with the rest of the dough.
10. Spoon on the tomato sauce and spread over the bases evenly using a brush.
11. Top with the shredded mozzarella cheese, and place your desired toppings on the pizzas.
12. Bake in the 180°C preheated oven about 20-25 minutes. Prepare the second tray the same way.
13. Mini pizzas are ready to be served!
