Directions:
Mix softened cream cheese, sugar, eggs, lemon juice and vanilla in bowl. Place wafer in bottom of each of 12 cupcake papers (in cupcake tin). Spoon in cream cheese mixture 3/4 full.
Bake in 375 degree oven for 15 minutes. Let cool. Top each with cherry pie filling and refrigerate for 1 hour or more.

The cookie base
110g cookies
30g almonds (chopped or processed)
50g white chocolate
3 tbsp milk
Cream cheese filling
200g cream cheese
150g white chocolate
210g heavy cream (50g warm to mix with white chocolate; and 160g cold heavy cream - whipped)
Raspberry jelly
150g raspberries
25g sugar
1 tbsp lemon juice
6g gelatine (bloomed)
Extra raspberries and blueberries for garnish

These mini cheesecakes are creamy and delicious and very easy to make. They definitely hit the spot when you are craving something sweet like cheesecake but want to stay withing your WW points!

Ingredients:
1 8 oz block of light cream cheese
3 Tbsp lemon juice
1 1/2 tsp vanilla
2 egg whites
1/2 cup granulated sugar
3/4 cup light pie filling (I used cherry)
12 reduced fat Nilla wafers
Cream cream cheese until light and fluffy. Add remaining ingredients except for the Nilla wafers, and mix until well combined. Place a Nilla wafer in the bottom of each muffin cup. Evenly pour batter into 12 muffin cups, about 2 Tbsp of batter each. Bake at 375 for 15 minute. Let cool completely then top with pie filling.
