How To make Indian Potato Curry
15 Baby potatoes
2 Zucchini
Ghee for cooking 1/2 Onion finely sliced
Pce ginger finely sliced 2 Cloves garlic finely sliced
ONION RELISH: 2 Red onions finely sliced
2 ts Sweet paprika
1 ts Cayenne pepper
Juice of 1 lemon Salt and freshly grnd peppe 2 sm Chillies seeded finely slicd
Fresh coriander leaves chpp 1/2 ts Garam masala
1/2 ts Ground cumin
1/2 ts Ground coriander
1/2 ts Cayenne pepper
30 Fresh peas podded
250 Ml coconut cream
1/2 bn Coriander
RAITA: 300 g Natural yoghurt
1/2 Continental cucumber
1/2 bn Fresh mint
2 Ripe tomatoes
1 ts Cayenne pepper
Salt and freshly grnd peppe Juice of 1 lemon To make onion relish, in a bowl combine onion, spices, seasonings and lemon juice, then squeeze them with your fingers. Let sit for an hour. Just before serving mix through coriander to taste. In a saucepan of lightly salted water, boil potatoes, in their skins, until just cooked. Allow to cool, then cut them in half. Slice zucchini on the bias into 5mm thick slices. Heat a little ghee in a heavy bottomed saucepan, and saute onion, ginger, garlic and chilli until soft. Add spices and fry for 30 seconds. Add all the vegetables, toss well and add coconut cream bit by bit as they cook. To make raita, put yoghurt in fine sieve and leave to strain for 15 mins. Grate cucumber with skin on. Chop mint leaves. Peel, seed and dice tomatoes. Combine vegetables with yoghurt and seasonings. Chill. Chop coriander leaves. When vegetables are cooked and a thick sauce has formed, add coriander and lemon juice to taste. ___--

Ingredients for Quick Aloo Curry:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Medium sized boiled potatoes- 500 gms
- Green chillies, cut into two pieces- 2
- Asafoetida (Hing)- a pinch (1/8 tsp)
- Cumin seeds- 1 tsp
- Kashmiri Chilli powder- 1 tsp
- Turmeric powder- 1/2 tsp
- Kasuri Methi (Fenugreek Leaves), dry roasted & crushed- 1 tsp
- Chaat Masala- 1 tsp
- Garam Masala powder- 1/2 tsp
- Salt- 1 tsp or to taste
- Water- 300 ml
- Coriander leaves, chopped- 2 tbsp
- Oil- 3 tbsp
Preparation:
- Add medium sized potatoes in a pressure cooker and add enough water to cover them completely. Add 1/2 tsp salt and mix it. (This helps in peeling the skin of the potatoes after they are boiled)
- Boil the potatoes in the pressure cooker with 2 whistles (1st whistle on high heat & 2nd on low heat). Allow the pressure to release and then remove and wash in cold water and keep in a colander/strainer for the water to drain completely.
- Peel the boiled potatoes & roughly mash them.
- Dry roast the Kasuri Methi (Fenugreek Leaves) and allow it to cool. Now roughly crush with your hand and set aside.
- Cut the chillies into two pieces & finely chop the coriander leaves.
Process:
- Heat oil in a kadhai & add a pinch of asafoetida(hing).
- Add the cumin seeds & then the green chillies.
- Give a stir, lower heat and then add the Turmeric powder & Kashmiri Chilli powder. Stir it once & add in the roughly mashed potatoes.
- Mix it well & sauté for a minute.
- Add 300 ml water and stir in the mashed potatoes.
- Add the salt, Kasuri Methi and give a stir. Cook on medium heat for 1 min and then lower heat. Cook on low heat for 2-3 mins till the masala is cooked, gravy thickens and oil separates.
- Now add the Chaat Masala & Garam Masala powder.
- Mix & let it cook for another 2-3 mins till oil separates. Add 50 ml water and mix in case you want a thinner gravy.
- Garnish with chopped coriander leaves.
- Enjoy hot with Poori or Paratha.

1 large red onion
5-6 cloves garlic
1 inch nub grated ginger
2 tsp curry powder
1 tsp turmeric
1 tsp cumin
Salt to taste
30oz crushed tomatoes
30 oz chickpeas
15 oz coconut milk
1/2 tsp fish sauce
Re-season to taste

I’ve found various recipes on how to make aloo curry and decided to cook the dhaba style. Dhaba means roadside restaurants and it is a more simple and rustical way of cooking (to my Indian friends, please correct me if i’m wrong!) I forgot to add water in the end but it was still tasty! Will do it again next time :) thanks for the recipe @thekitchenn

Chapathi - Tasty Potato Curry | Easy Potato Curry for Chapathi
Ingredients
Potato - 4 nos
Onion - 4 nos
Tomatoes - 2 nos
Ginger - 1 nos
Garlic - 7 or 8 nos
Curry leaves - 3 or 4
Turmeric powder - 1 tbsp
Coriander powder - 2 tbsp
Garam masala - 1 tbsp
Pepper powder - 1 tbsp
Mustard seed - 1 tsp
Salt - 1 or 2 tsp
Oil - 2 or 3 tbsp
Method
Take a pan add potatoes and boil them well.
Drain boiled potatoes ,put them in a bowl filled with cold water
Then peeled and set them aside.
Then smashed the potatoes with fingers.
Heat oil in a pan add mustard seed ,let them spluttered .
Add curry leaves and chopped onion ,saute them well.
Add ginger garlic and salt ,saute them well.
Then add turmeric powder ,coriander powder, garam masala and pepper powder ,saute them well.
Add chopped tomatoes and saute them well.
Then add smashed potatoes ,saute them well.
Then pour some water and salt ,mix them well.
Then cook for 5 to 6 minutes .
Remove from fire and set a side.
Serve the tasty potato curry with chapathi .
Ingredients for chapathi
Wheat flour - 2 cup
Water - 1 or 2 cup
Oil - 2 or 3 tbsp
Salt - 1 or 2 tsp
Method
Take a large bowl add wheat flour
Then sprinkle some salt and oil ,mix them well.
Then add water little by little
And know well for a few minutes until its combined well.
Then rest for 20 to 30 minutes .
Now take small size dough .
Roll the balls in the palms to smoothen it
Dust both sides of the flattened balls with
some flour and roll it using a roller pin and board
Heat a pan add placed a chappathi on it
Cook both sides by flipping the chappathi
Remove from pan and set aside.
Serve the chapathi with potato curry
