Lazy Asparagus Crustless Quiche
Hi all, I'm going to make more of an effort to up load a few recipes for you this year as I promised last year and didn't do it (my bad) hopefully they will be recipes you have not tried before and might end up giving them ago. All recipe details are below.
Lazy Asparagus Crustless Quiche
Serves 4 or 2 one as a dinner with veg and lunch the next day
You will need:
10/12 spears of asparagus
5 eggs beaten
10oz/300gs cottage cheese
4oz of strong cheddar cheese - grated
1 square of Garlic and herb cream cheese or 1 tablespoon or more if you like a stronger taste
Method:
In a glass cooking dish add the garlic and herb cream cheese the cottage cheese and the 5 beaten eggs and blend until smooth
Add to the mix half of the strong cheddar
Top with the asparagus spears and the remaining grated cheese
Pop into at hot oven at 180 for 25 to 30 minutes (you know your oven so this will vary) or until golden brown
When cooked leave to stand for an hour so the quiche sets
Serve with steamed carrots and new potatoes or salad
Alternatives when in season – Leeks – I would add the garlic and herb cream cheese to this version or a traditional bacon and tomato quiche Lorraine - garlic and herb cream cheese optional on this one
Enjoy!
