Crustless Coconut Custard Pie
In this video we'll making a Crustless Coconut Custard Pie a creamy and custard-like pie recipe that easy and quick to make. We’ll show you how to bake this old-fashioned dessert recipe from scratch and it’s simple to stir in the melted butter, cane sugar, eggs, flour, unsweetened coconut milk, vanilla extract and sweetened flaked coconut and put it in a pan. The Crustless Coconut Custard Pie is a one-bowl dessert that has been around for decades in the USA. This pie is knows by many name depending on your region where you live. It’s called the Miracle Pie because it makes its own crust or Impossible Coconut Pie or coconut custard pie. Enjoy!

Crustless coconut custard pie (Preheat oven to 350 degrees)
¼ cup melted unsalted butter
½ cup cane sugar
2 eggs
1-1/2 teaspoon vanilla extract
1 cup sweetened coconut
¼ cup self-rising flour (see recipe below)
1 cup unsweetened coconut milk
Directions: In medium bowl, stir all ingredients until blended. Pour into pie pan.
How to make Self-Rising Flour
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
Directions: Put all ingredients into a bowl and whisk to combine.
Heat oven to 350°F. Grease 9-inch pie pan . In medium bowl, stir all ingredients until blended. Pour into pie pan.
Bake 40 to 45 minutes or until golden brown and knife inserted in the center comes out clean. Refrigerate left over pie. Enjoy!
