Basque Burnt Cheesecake
1 cup cream cheese
1/4 cup white sugar
3 eggs
1/4 cup all purpose flour
215g whipping cream
1tbsp. vanilla powder or vanillin
sugar
mix with electric mixer the cream cheese until soft , add sugar and 3 eggs mix well until fluffy and smooth, add whipping cream and vanilla then sift this after that , add all purpose flour and mix slowly. Bake in 220C for 40 mins.cool it down then put in the fridge at least 3 hrs. to have a better taste.

Hungarian Rice Pudding Cake (Rizskoch)
Hungarian Rice Pudding Cake (Rizskoch) is a simple but delicious dessert, based on a rice pudding, but adding egg yolks and beaten egg whites to it, it become almost a souffle. Almost... I would call it a cake instead as it's baked in a pan in the oven, then cut it individual squares.
I love to eat it with some raspberry cordial (as I had it in my childhood), but it's usually served with smooth, homemade apricot jam.
Ingredients (for 6-8 portions):
350 grams (0,8 lbs) short grain rice
500 ml (about 2 cups) water
500 ml (about 2 cups) milk
a pinch of salt
100 grams (3.5 oz) butter at room temperature (plus some for greasing the pan)
150 grams (5.3 oz) sugar
1 pack (about 2 tbsp) vanilla sugar
4 eggs (separated)
zest of half of a lemon
1-2 tbsp fine breadcrumbs (for dusting the pan)
icing sugar
raspberry cordial /or apricot jam
1. Put the washed and drained rice into a pot, pour the water over, add a pinch of salt and cover the pot. Cook on medium-low heat, (stirring sometime) until all the water has absorbed.
2. Now, pour in the milk, stir and cover the pot. Cook on very low heat (stirring now and then) until the rice is tender, and has absorbed the milk. (it takes about 20-30 minutes, depending on the rice you use)
3. When it's done, remove from the heat and let it cool uncovered
4. Meanwhile separate the eggs.
5. Add sugar, vanilla sugar and butter (at room temperature) to the egg yolks and stir well until you've got a smooth, creamy and fluffy texture. Set aside.
6. Beat the egg whites until they form soft peaks.
7. Now, add the egg yolk-mixture to the cooled rice, and gently mix them together until well combined.
8. Add the egg whites and gently fold it into the rice mixture (be careful not to break the airy texture of the egg whites!)
9. Grate in the zest of half of a lemon and stir gently.
10. Grease a baking pan (I used a 30x20x5 cm) with butter then dust it with a handful of fine breadcrumbs.
11. Pour in the rice mixture and bake in the preheated oven, at 180C (360F) for 35-40 minutes
12. When the top is nice golden brown, remove the pan from the oven.
13. Cut the cake into 6 or 8 squares and serve while it's still warm.
14. Sift some icing sugar over and pour 3-4 tablespoon of raspberry cordial on top. (or serve it with good quality, homemade smooth apricot jam)

Basque Burnt Cheesecake Recipe | Creamy and gooey easy cheesecake
A simple cheesecake that is the opposite of what you would imagine the perfect cheesecake to be.
Overly dark on the top, no biscuit or sponge base, and without the use of a water bath in the baking process. It's as simple as a cheesecake could get.
I had a small obsession with this cake ever since I laid eyes on it. Visually it stole my heart, and although I have never tasted the original slice of this cake from Basque, I have tried my best to recreate what I imagine it to be and this is my take on that cake.

Cavalcade & Friends: Hungarian Cheese Cake
Our friend Lisa stopped by with a recipe for Hungarian Cheese Cake that she had been wanting to try, so we gathered the ingredients and baked one up!
Pre-heat oven to 300 degrees.
1 1/4 cups graham cracker crumbs
1/3 cup melted butter
1/4 cup sugar
1 tsp cinnamon
Combine all in a bowl. Press into the bottom of a 9x13 baking dish.
1/2 lb. creamed cottage cheese
1 lb. dry cottage cheese (drained of as much liquid as possible)
4 eggs
1 cup sugar
1 cup sour cream
2 TBSP lemon juice
1/2 tsp lemon zest
Put cottage cheese, sugar, and sour cream into a large mixing bowl and beat with electric mixer until smooth a creamy. Add eggs one at a time, beating after each addition. Add lemon juice and zest and mix. Pour mixture over cracker crumbs in baking dish and bake for 60 minutes at 300 degrees.
1 cup sour cream
1/4 cup powdered sugar
2 tsp vanilla
2 TBSP corn starch
Whisk ingredients in bowl and spread on warm cake when you take it out of the oven. Put cake back with topping back in oven and bake for another 10 minutes.
Allow cake to cool completely and chill before serving.

3 Eigelb
eine Prise Salz
80 g (6 EL / 2,8 oz) Puderzucker
80 g (1 Stick) geschmolzene Butter
1 TL Vanille
200 g Mehl
1 TL Backpulver
Trennen Sie ein kleines Stück Teig ab und legen Sie es für 15 Minuten in den Gefrierschrank.
Backform 20 cm
????Creme:
500 g griechischer Joghurt
50 g (4 EL / 1,7 oz) Maisstärke
1 TL Vanille
Gut mischen
3 Eiweiß
eine Prise Salz
130 g (0,7 Tassen / 4,5 Unzen) Zucker
Schlagen, bis die Spitzen hart sind, dann unter den Joghurt heben
Den Kuchen wie im Video zusammenbauen
1/3 des Teiges gefroren reiben
Backen Sie 40 Minuten in einem gut vorgeheizten Ofen bei 180 C / 350 F oder bis die Oberseite des Kuchens gleichmäßig aufgeht
