1 c Butter 1 1/2 c Sugar 1 lb Dates; chopped 2 Eggs 2 tb Milk 1 c Nuts; chopped 1 ts Vanilla 4 c Rice krispies 1 pk Flaked coconut; 14-oz pkg Melt butter and sugar in a skillet, stirring for 2 minutes. Add chopped dates. Set aside. In a small bowl, beat 2 eggs and milk. Slowly add a small amount of hot mixture to eggs and milk. Pour entire egg mixture into skillet. Cook mixture 2 minutes, stirring constantly. Add nuts, vanilla, and cereal. Roll small amount, about 1 large heaping tablespoon, into a ball (be careful, it will be hot) and roll ball in coconut. This freezes well. -----

This one is a real humdinger! Humdinger Cookies (12 Cookies of Christmas - Recipe 3)
Recipe: Sweet and crunchy, these Humdingers are fantastic!! The Humdinger is our third recipe in The 12 Cookies of Christmas (and recommended to me by my friend Angelica). When she told me about this recipe, I had a hard time imagining how these would turn out, but I was super surprised that they were really easy to make and quite delicious!

Humdingers Cookie
INGREDIENTS 1 stick of butter ¾ cup of sugar 8 oz of chopped dates (14-15 dates) 1 tsp vanilla 2 ½ cups rice krispies 1 cup chopped nuts Powdered sugar for rolling
DIRECTIONS Using a silicone spatula, melt butter and sugar over low/medium heat stirring until combined (around 2 minutes). Add in dates and cook for about 5-7 minutes or until the mixture caramelizes. Remove from heat, add vanilla, Rice Krispies, and chosen nuts. Allow mixture to cool slightly before using a scoop to shape into uniform balls. Roll each ball in powdered sugar.
