How To make Hot Spicy Cold Noodles
1 lb Chinese noodles
-(fresh) 4 Scallions (or green
-onions), chopped 2 t Chili oil
2 t Sesame seed oil
2 T Vinegar
2 T Sugar
1 1/2 t Salt
1/2 t Black pepper
-(fresh ground) 1 t MSG (optional)
2 Red peppers (fresh),
-chopped Cook the noodles in boiling water for 3 minutes, then drain. Rinse them in cold water until they are cool, then set aside to drain. Make the sauce by mixing together all of the other ingredients. Heat about 4 T oil in a wok. When it is hot, pour in the sauce mixture, and then the
noodles. Stir well to cover the noodles with sauce, then remove and cool. NOTES: * Easy, spicy-hot cold noodles for summer -- This recipe is an easy prepare-ahead dish for a hot summer day. It makes a good barbecue side dish for all of us who are tired of potato salads. Yield: serves 4-6. * You can serve this dish warm if you want, but it is better when cold. Korean Spicy Cold Noodles Recipe - the Perfect Summer Dish Idea (Bibimguksu)
Been feeling hot lately? I made this spicy cold noodle that really helped me cool down. It's my summer time go-to lunch menu. This recipe uses somen, and is called bibimguksu (비빔국수) in Korean. There is another kind cold noodle out there called naengmyun in either chilled broth or spicy sauce, which is also super popular. This somen cold noodle recipe is so much easier to make at home though. This is one of those recipes where if you have the ingredients in the pantry, you can whip this up in 5 minutes. Ingredients:
Sauce
2 tbsp gochujang
3 tbsp apple cider vinegar
1 tsp light sodium soy sauce
2 tsp brown sugar
1 tbsp sesame oil
1 tsp gochugaru
3 cloves minced garlic
Noodles & toppings
Somen noodles
1 egg
1/2 cucumber
1 lettuce leaf
2 tbsp purple cabbage
2 tbsp kimchi
Pinch of sesame seeds

Dave Chang is back in the kitchen cooking Sweet & Spicy Cold Noodles, using our new Momofuku Sweet & Spicy Noodles as the base for his on the fly recipe. This dish is inspired by Bibim Naengmyeon or Bibim Guksu, two cold noodle dishes that are central to Korean culture. He loves eating these noodles cold, showing how versatile our pantry products are through creative recipes like this one. The finished dish is not traditional, but it’s absolutely delicious. He brought this recipe to life with Momofuku Sweet & Spicy Noodles, Momofuku Toasted Sesame Oil, Momofuku Soy Sauce, and Momofuku Chili Crunch.

Korean Spicy Cold Noodles Recipe Bibim Guksu 비빔국수
Light, tangy, sweet and spicy cold noodles on crisp fresh spring greens salad.
Korean Spicy Cold Noodles sauce recipe:
Hot pepper paste Gochujang (고추장) ¼ cup
Sugar ¼ cup
White vinegar 3 Tbsp
Soy sauce 1 Tbsp
Sesame oil 2 Tbsp
Korean chili powder Gochugaru (고춧가루) 1 tsp
Sesame seeds 4 Tbsp
3 cloves crushed garlic (1 Tbsp)
Lemon juice 1 Tbsp (helps make noodles more light and bright but can substitute with white vinegar)
Korean Spicy Cold Noodles:
Somyeon/somen noodles, thin wheat flour noodles 소면 200g
handful of salad spring greens
½ cucumber julienned
½ onion thinly sliced
1 hard boiled egg
(serving size: 2)
