How To make Hot & Spicy Chicken Quesadillas
2 ts Olive oil
2 Boneless chicken breasts,
-cut into strips 2 tb Chili sauce
1 Jalapeno pepper, seeded and
-diced 4 Eight inch flour tortillas
1 c Shredded Cheddar cheese
4 ts Canola oil or plain
-vegetable oil Preheat the Calphalon Solo Griddle on medium heat on top of the stove. Add the olive oil to the hot pan. Place the chicken strips, chili sauce and jalapeno pepper in the pan and saute until cooked through, approx. 3-5 minutes. Remove and reserve. Wipe the pan clean. Place the chicken mixture on one half of each of the 4 flour tortillas. Sprinkle with cheese and fold over to form a half circle. Again, preheat the Calphalon Solo Griddle on medium. Oil the cooking surface with one tsp. Canola oil. Place a filled tortilla on the cooking surface. Cook until light brown. Turn. Repeat with the other three tortillas. Slice each tortilla into three wedges and serve with salsa and black beans. Serves 4

Jalapeño Chicken Quesadillas ????
THESE ARE SO GOOD I PROMISE.
Spice mix:
1 tsp chili powder
1 tsp paprika
1 tsp salt
1 tsp sugar
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
1/2 tsp cumin
Apply seasoning accordingly. I didn’t use all of it (used about half)
2 lbs chicken things
4 large flour tortillas
4 cloves garlic
1/4 cup jalapeño pickle juice
Juice of 1 lemon
A couple hour marinate is worth it!
EASY GUAC:
2 avocados
1 Roma tomato
1 jalapeño
1/4 cup cilantro
1/2 red onion (diced)
2-3 cloves garlic
Juice of a lime
Salt to taste
Jalapeño sauce is to die for:
1/2 cup mayo
1/2 cup sour cream
1/4 cup diced jalapeños
1-2 Tbsp jalapeño juice ( just trust me)
Pinch of fajita seasoning you made earlier ;)
Spread the sauce all over the chicken. It sort of coats it and makes it so creamy and flavorful. Don’t be a wimp when you apply it.
1/2 cup mozzarella
1/2 cup sharp cheddar
Apply cheese with your heart, don’t be a b**ch
1 Tbsp of butter for each quesadilla. Use Kerry gold or local Amish butter if you can!
Medium heat for the toasting so you don’t burn the bread!

Preparation
Combine first 3 ingredients in a small bowl; stir until blended.
Place 1/4 cup chopped chicken over half of 1 tortilla. Sprinkle with 3 tablespoons cheese and 1 tablespoon onion mixture; fold in half. Repeat procedure with the remaining tortillas, chicken, cheese, and onion mixture.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Place 2 quesadillas in pan. Cook 2 minutes on each side or until lightly browned. Repeat procedure with remaining quesadillas. Cut each quesadilla in half. Serve with salsa.
