How To make Hot & Spicy Chicken Quesadillas
2 ts Olive oil
2 Boneless chicken breasts,
-cut into strips 2 tb Chili sauce
1 Jalapeno pepper, seeded and
-diced 4 Eight inch flour tortillas
1 c Shredded Cheddar cheese
4 ts Canola oil or plain
-vegetable oil Preheat the Calphalon Solo Griddle on medium heat on top of the stove. Add the olive oil to the hot pan. Place the chicken strips, chili sauce and jalapeno pepper in the pan and saute until cooked through, approx. 3-5 minutes. Remove and reserve. Wipe the pan clean. Place the chicken mixture on one half of each of the 4 flour tortillas. Sprinkle with cheese and fold over to form a half circle. Again, preheat the Calphalon Solo Griddle on medium. Oil the cooking surface with one tsp. Canola oil. Place a filled tortilla on the cooking surface. Cook until light brown. Turn. Repeat with the other three tortillas. Slice each tortilla into three wedges and serve with salsa and black beans. Serves 4

Quesadillas are incredibly popular. The reason is because they are insanely easy and incredibly
delicious! I like to experiment with different melting cheeses. Oaxaca happens to be an all time favorite and mozzarella one that’s always present in my kitchen. These are with no doubt the best quesadillas. They have so much flavor and if you love cheese these are going to make you so happy.
Note: In place of the ground ancho chile
you can use paprika or cayenne.
For the Chicken
2 chicken breast 1lb
Seasoning
Chilli powder 1 TBSP
Cumin, ground 1/4 tsp
Ancho chile, ground 1 tsp
Garlic powder 1 tsp
Onion powder 1 tsp
Salt To your liking
(I did: 1 1/2 tsp)
Black Pepper To your liking
Mini sweet peppers 14ea or 2 bell peppers (1 1/2 cups)
White onion (Large) 1/2 ea
Mozzarella & Oaxaca cheese:
To taste.
Pico
Large tomatoes 2 ea (1 lb)
White onion (large) 1/8ea
Cilantro 1/4 cup
Lime juice 1/2 ea
Jalapeño (OPTIONAL) 1ea

FOR QUESADILLAS
• 6 medium to large flour or corn tortillas, see our homemade flour tortilla recipe
• 3 cups shredded green chile chicken, recipe below
• 8 ounces mild melting cheese like queso de Oaxaca or Monterey Jack, shredded (about 2 cups)
• Spray oil or oil brushed onto pan
• Fresh cilantro and lime wedges, for serving
FOR GREEN CHILE CHICKEN
• 3 pounds boneless chicken thighs or chicken breast
• 2 cups green enchilada sauce or salsa verde, try our roasted tomatillo salsa recipe
• Salt to taste

Spicy Chicken Quesadillas - Made From Buffalo Chicken
Spicy Chicken Quesadillas made from shredded chicken breast, buffalo sauce, and lots of cheese. These spicy quesadillas are not that difficult to make and can be made in under an hour.
Ingredients
• 3 or more chicken breast (slice chicken breast for quicker cook time)
• 1/2 cup or more buffalo wing sauce of choice
• 1 tsp paprika
• 3 Cloves Minced Garlic (Optional if sautéing)
• 1 tsp onion powder
• 1 tbsp chili powder
• 1 tsp coarse pepper
• 2 tbsp williams food co for pork and chicken
• 1 tsp cayenne powder
• 1tsp garlic powder
• 2 Tbsp cilantro optional
• 4 or more flour tortillas
• 2 cups or more of shredded Mexican cheese blend
• 1/4 sour cream for dipping
Optional
• 2 tablespoons ranch dressing
• 1/4 sour cream for dipping
Instructions
1. If using uncooked chicken, cook the chicken using your desired method until the internal temperature reaches 165 degrees Fahrenheit or 74 Celsius.
2. In a small bowl, toss chicken, buffalo sauce, ranch (optional), cheese, seasonings, and cilantro.
3. Warm up a pan and lightly grease with oil of choice, Place tortilla on pan, top with chicken mixture and fold in half, or place another layer of cheese and a tortilla on top. Cook for 2 minutes and flip and cook other side for 2 minutes . Remove from heat and repeat the process for all tortillas. Slice each quesadillaa into 4 pieces..
Optional
4. In a small bowl, mix sour cream, garnish with cilantro and serve with the quesadillas as a dip

•800g Chicken (i recommend thighs because its easier to cook)
•2tbsp Oil (i used Canola oil)
