HONEY CHICKEN | HONEY GLAZED CHICKEN
INGREDIENTS
chicken - 300 gms
egg - 1
corn flour - 2 tbsp
chili powder - 2 tsp
pepper - 1½ tsp
red chili sauce - 1 tsp
soya sauce - 2 tsp
tomato sauce - 2 tsp
green chili - 1
chopped garlic - 1 tbsp
honey - 2 tsp
sugar - 2 tsp
celery
spring onion
white sesame - 1 tbsp
ginger garlic paste - 1 tsp
maida - ¼ cup
water
salt
oil
METHOD OF PREPARATION
1.Marinate 300 gms chicken with required salt,1 tsp pepper,2 tsp kashmiri chili powder , 1 tsp ginger garlic paste, 1 tsp soya sauce and 1 egg.Mix well.
2.Add 1 tbsp corn flour and ¼ cup maida and mix well and marinate for about 30 minutes.
3.Heat some oil in a kadai and fry the chicken until it becomes golden brown.
4.In the same kadai add 1 tbsp chopped garlic,1 green chili and saute for 2 minutes.If there is a lot of oil remove some.
5.Add 1 tsp red chili sauce,1 tsp soya sauce,2 tsp tomato sauce,½ tsp pepper,2 tsp honey,2 tsp sugar,little salt and mix well.
6.In the marinated bowl take 1 tbsp corn flour and mix well with ½ cup water.
7.Pour it into the sauces and let it boil.Then add the chicken and mix well and let it be there on low flame for about 3 minutes.
8.At last add 1 tbsp roasted white sesame and a few celery and spring onion.
HONEY CHICKEN READY !!!

Crispy Honey-glazed Fried Chicken
Servings: 8
INGREDIENTS
Spice Mix
2 tablespoons salt
3 tablespoons black pepper
2 tablespoons onion powder
2 tablespoons garlic powder
3 tablespoons paprika
2 tablespoons cumin
2 tablespoons oregano
2 teaspoons cayenne pepper
3 cups all-purpose flour
8 bone-in, skin-on chicken drumsticks and thighs
3 cups buttermilk
Oil, for frying
Honey, for serving
PREPARATION
1. In a medium bowl, add the salt, pepper, onion powder, garlic powder, paprika, cumin, oregano, and cayenne and mix until combined.
2. Pour half of the spice mix into the flour, mixing until the spices are evenly distributed throughout the flour.
3. Add the chicken to a bowl, and sprinkle the remaining spice blend over it. Mix until all the chicken pieces are evenly coated.
4. Pour the buttermilk over the chicken, and stir until the residual spices from the chicken have blended in with the buttermilk to create a light orange color.
5. Marinate the chicken in the fridge for 2 to 8 hours.
6. Heat oil to about 325°F (170°C) in a large cast iron skillet.
7. Dredge each piece of chicken into the flour, shaking off any excess. Dip them back into the buttermilk mixture, then back into the flour. Make sure to shake off excess flour or it’ll burn while frying.
8. Fry 3-4 chicken pieces at a time, occasionally turning the pieces over. Cook for about 10-12 minutes, until golden brown and crispy.
9. Rest the chicken pieces on a wire rack to let excess oil drain off.
10. Drizzle with honey, then serve!

Today, we are making honey glazed roasted chicken wings. This a classic item you get from Cantonese style BBQ shops called Siu Laap. You have probably seen it many times in China Town as its really popular - the restaurant will have huge windows where they hang their roasted duck, chicken, crispy pork belly, char siu... Honey glazed wings is my all-time favorite and it is so easy to make.

INGREDIENTS FOR THE MARINADE
1 kg of chicken wings
2 tbsp of soy sauce (Amazon Link -

1.5 tsp of salt
2 tbsp of honey
1 inch of ginger, crushed and diced
4-5 cloves of garlic, crushed and diced
3 scallions, diced
INGREDIENTS FOR THE HONEY GLAZE
3 tbsp of honey
1 tsp of water (optional)
INSTRUCTION
We will make the marinade first. In a bowl, add the following ingredients: 2 tbsp of soy sauce, 1 tbsp of hoisin sauce, 1 tbsp of oyster sauce, 1 tbsp of sriracha, 2 tbsp of honey, 1.5 tsp of salt, crushed ginger, scallions, and garlic. Mix and set it aside.
For the chicken wings, you just use paper towels to absorb the moisture; you do not want any excess liquid to dilute the seasoning.
Add all the wings into a zip-lock bag along with the marinade. Push out as much air as possible and seal the bag. Give them at least a 5 minutes massage to even out the marinade. That is all the preparation. So easy. Let it sit in the fridge overnight.
The next day, preheat the oven to 420 degrees F. Take the wings out and place them onto a baking rack. Let it bake for 25 minutes.
25 minutes later, take the chicken wings out. They are already looking good, but if you check underneath the color is not as good so I like to flip them all over and bake them for another 15-20 minutes. Every oven is different so please keep an eye on it.
Glaze the chicken with 3 tbsp of honey. Enjoy!
