How To make Hollandse Kippesoep (Spiced Chicken Soup)

4 lb Chicken, cut in pieces
1 Onion, peeled
4 Cloves, whole
1/2 ts Mace
1/4 ts Pepper
2 Celery stalks, cut in
-chunks 2 Bay leaves
1 1/2 ts Salt
1/2 ts Thyme
1/2 ts Rosemary
4 Sprigs parsley
2 lg Carrots, cut in chunks
1/4 lb Vermicelli pasta
Chopped fresh parsley In the 1600's when Amsterdam was a booming commercial centre, the Dutch East India Company brought pungent spices, such as nutmeg, cinnamon and cloves, to Holland. These spices linger on in Dutch cooking. If mace is not available, nutmeg can be substituted. In a large pot, place chicken. Pour in enough boiling water to cover; bring to a boil over high heat. Remove chicken to a clean pot. Stud onion with cloves and add to chicken along with bay leaves, 1/2 ts salt, thyme, rosemary, mace, pepper, celery, parsley sprigs and carrots. Pour in 12 cups cold water. Bring to a boil over high heat. Reduce heat to low and simmer, covered for 5 hours, or until meat comes away from the bones. Let cool and skim off fat. Strain through cheesecloth lined sieve. Remove meat from bones, chop and set aside. Return chicken stock to a clean pot and bring to a boil. Add vermicelli. Cook for 5 minutes. Return chicken and remaining salt to pot. Cook just until heated through. Taste and adjust seasonings. Garnish with chopped parsley. From Canadian Living Nov/93

Benodigdheden voor 2 personen:
1550 gram kippenpoten
100 gram shiitake
100 gram kastanjechampignons
40 ml vissaus
40 gram basterdsuiker
1 stengel sereh (citroengras)
1 rode peper
1 limoen
25 gram gemalen laoswortel
400 ml kokosmelk
1 blokje kippenbouillon
Koriander
Bereidingswijze:
Breng de kippenpoten in 1,5 l koud water aan de kook samen met een blokje kippenbouillon.
Maak de peper schoon door hier de zaden uit te verwijderen. Snijd de peper vervolgens in stukjes.
Snijd de shiitake en kastanjechampignons doormidden. Snijd grote kastanjechampignons in vieren.
Snijd de koriander fijn.
Bewaar de peper en koriander voor later.
Wanneer het water met de kippenpoten kookt, kun je het vuur hiervan wat terugdraaien, zodat het rustig kan doorkoken.
Breek de stengel sereh en voeg deze toe aan de pan met de kip. Deze zorgt voor extra smaak in de bouillon.
Als de kip zo’n 15-20 minuten heeft kunnen koken, zijn de kippenpoten gaar en haal je deze met een schuimspaan uit de pan, haal ook de sereh uit de pan. De sereh mag je vervolgens wegdoen. Het water waarin de kip gepocheerd is, bewaar je als bouillon voor de soep.
Voeg bij de overgebleven bouillon de paddestoelen, basterdsuiker, laoswortel, vissaus, het sap van de limoen, en de kokosmelk.
Roer dit even door en breng het op middelhoog vuur aan de kook. Laat het vervolgens 8-10 minuten pruttelen.
Haal het vel van de kippenpoten af en trek met twee vorken het vlees in grove stukken van het bot. Voor een vullende soep voeg je het vlees van twee kippenpoten aan iedere soepkom toe.
Voeg de gesneden peper toe aan de bouillon en laat deze nog een minuut of 3-4 meekoken.
Giet de bouillon over de kip heen.
Maak het helemaal af door de soep met de stukjes koriander te besprenkelen.
Eet smakelijk!

Brazilian chicken soup recipe:
Ingredients:
1/2 or whole skinless chicken using all the parts with the bone
2 large pieces of fresh ginger
2 tablespoon crushed garlic
1 cube chicken bouillon mix
1 sweet potatoes
4 small potatoes
Black pepper
Pepper flakes
Salt to taste
½ red onions
Few drops dende oil (Brazilian oil. Can substitute for canola or olive oil)*
2 large table spoon tomato paste
Thyme
1 large red pepper
Grate hard parmesan cheese
Chinese lettuce – cut up 2 large leaves
(can add 3 bowl eggs optional)*
Olive oil
Hot sauce i.e. Tobacco
Orange squash or yellow pumpkin
Direction:
In a large pot of water add seasoned chicken wings, cube bullion mix, salt, red onions sliced, table spoon olive oil, black pepper let boil for 20 minutes
Add, sweet potato sliced, squash or yellow pumpkin, red peppers, hot sauce, pepper flakes, dende oil, thyme, grate hard parmesan cheese. Let cook for 20 mins.
Then add, white potatoes, tomato paste, Chinese lettuce (more cheese and boil eggs, salt) if needed
Cook for 15 more minutes or until meat has left bones.
Turn off stove and let cool.
That's it! You can always substitute ingredients if there is something here that you don't have. Let me know how yours turn out.

One bowl of this soup will not be enough and you will definitely want more. This chicken soup is very good for digestion and is very good to eat after the holidays to relieve the digestive system.
Recipe:
350 g chicken
1.5 liters of water
cook until done
remove foam
chop 2 onions
frying oil
fry the onion over medium heat
cut 1 carrot
fry over medium heat
add 1 spoon of broth
take the chicken out of the broth
leave to cool
cut 2-3 potatoes
after 3 minutes add 2 tablespoons of paste
add a few black peppercorns
add 3 bay leaves
cook until potatoes are cooked
add 1 cup frozen peas
beat 1 egg

add salt to taste
add chicken meat
Easy chicken soup is ready!
