1 pk (8 oz) ground dried Apricots 2 1/2 c Flaked coconut 3/4 c Sweetened condensed milk 1 c Finely chopped nuts Blend apricots, coconut & milk well. Shape into small balls. Roll in chopped nuts. Let stand about 2 hours to firm.

Apricot Balls and White Christmas Slice
This week's session presents two easy non-cook recipes that also make yummy gifts for Christmas. They look great in small decorated cellophane bags and they freeze super well. Make ahead and freeze and then simply pull them out to take to those Christmas gatherings or serve after Christmas lunch on the day. No fuss, no cooking and there when you need them.
Apricot Balls
500 g dried apricots, chopped 395g sweetened condensed milk 2 1/2 cups coconut 1 cup coconut extra (can be toasted if desired)
Method
Combine all ingredients.
Wet hands and roll mixture into small balls then coat in extra coconut.
Refrigerate or freeze for later.
White Christmas slice
500g white chocolate 1 1/2 cups rice bubbles 100g red glace cherries, halved 160g almonds, halved & roasted 160g sultanas 1 cup (90g) desiccated coconut 1 teaspoon vanilla extract
Method Line a 30cm x 20cm (base) baking pan with baking paper. Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Fold in the remaining ingredients. Pour mixture into the prepared pan, pressing down with a large metal spoon. Refrigerate for 4 hours or until set. Turn slice onto a chopping board. Using a knife that has been dipped in hot water, cut into squares.
