How To make Hint Of Ginger Marinade
FOR POULtrY, PORK, FISH:
3/4 c Soy sauce
1/4 c Dry sherry
1 Small carrot; peeled, minced
1 Garlic clove; minced
1 T Sweet red pepper; minced
1 1/2 t Ginger root; minced
2 Small scallions; chopped
1 t Lemon peel; grated
Combine all ingredients in a bowl. Makes about 1-1/4 cups

Pickled ginger is usually made from very young ginger with pink tips that can cause the ginger to turn pinkish. Some commercial ones contain food coloring and chemicals. This recipe only contains 3 ingredients including the ginger.
It has a very long shelf life (usually 6 months or more) and is usually eaten with sushi but some people put it in salads, seafood and meats.

Ginger Sauce (Japanese Steakhouse Copycat)
Japanese Steakhouse copycat ginger sauce is so quick and easy to make, you’ll need 6 ingredients and under 5 minutes to make it. This popular sauce that you eat at Benihana’s Japanese restaurants is a great dipping sauce for hibachi shrimp, steaks, chicken, veggies, and rice too.
Ingredients
2 tablespoons ginger, peeled and chopped roughly
1 medium yellow onion, roughly chopped
1/2 big lemon, zest and juice
1/4 cup rice vinegar
3/4 cup soy sauce
1 teaspoon brown sugar
Instructions
Using a spoon peel the thin brown skin off the ginger root and roughly chop it. Cut onion into quarters.
Add ginger and onion to a food processor and pulse it for a few seconds. This step is optional. Though you can pulse all ingredients together at once, I prefer to pulse onion and ginger first before I add in the liquids.
Add rice vinegar, soy sauce, brown sugar, zest of lemon, and freshly squeezed lemon juice to the processor. Pulse until desired consistency is reached. This sauce can be chunky as you like. Do not make it very smooth. It’s best with a chunky texture.
Taste the sauce and adjust it to your preference. If it’s too salty for your palate, squeeze a little more fresh lemon juice into it. If you prefer it a tad sweeter, add 1/2 teaspoon more brown sugar.

Vietnamese Ginger Braised Chicken
Serves 4
Ingredients
2 lb chicken thighs
(Cut into bite size pieces)
1 teaspoon kosher salt
2 teaspoons chicken bouillon powder
3 tablespoon neutral oil
3 tablespoon minced ginger
2 tablespoon minced shallots
1 tablespoon minced garlic
4 tablespoon cane sugar
2 tablespoon fish sauce
1/2 cup coco rico
(Coconut soda)
Black pepper to taste
Julienne ginger as desired
Optional garnish thai chillies
Direction
1. Combine salt, chicken bouillon powder, and black pepper to your chicken thigh. Give it a mix and let marinate or 30 minutes
2. Next add oil to a pan on medium low heat. Add minced garlic and fry until it turn a light blonde color. After that add the shallots, ginger and continue to cook for another 30 seconds then remove from the heat and set aside
3. In a separate pan on high heat add the cane sugar.
4. Once it turns amber carefully add your chicken and stir for 1 minute
5. Next add fish sauce, coco rico, and the aromatics
6. Stir everything together, place a lid on and simmer for 30 minutes or until your chicken is cooked through.
7. Season with more black pepper, and ginger.
8. Garnish with thai chilies if you like an extra kick of heat.
9. Serve with cooked jasmine rice and enjoy!
