Religieuses are a fine French pastry usually coffee or chocolate flavored. The religieuse is a perfect mix between a sweet and creamy pastry cream and a soft yet crunchy choux pastry. Today, we decided to show you our favorite recipe which is a Hazelnut Praline Religieuse. If you want to try that rich and flavorful recipe, don't be scared we will show you every step of the way! 300g hazelnuts
200g sugar
Hazelnut Custard
500ml milk
100g sugar
45g cornstarch
5 egg yolks
25g butter
60g hazelnut praline paste
Choux pastry
250ml water
100g butter
5g sugar
2g salt
150g flour
200g eggs
Hazelnut Buttercream
2 egg whites
125g sugar
150g butter
50g hazelnut praline paste
Ganache
120ml cream
100g chocolate
