How To make Harvest Time Meatballs
1 x Recipe Basic Meatballs
2 T Margarine Or Butter
1/8 t Instant Minced Garlic OR
-1 fresh clove of garlic, -minced, OR 1/8 t of -garlic powder 1/2 t Thyme Leaves
1/2 lb Fresh Mushrooms sliced
3 ea Med. Zucchini, thin sliced
1/2 t Salt
1/3 c Parmesan Cheese; Grated
2 ea Tomatoes
-cut into 8 wedges each Prepare the basic meatballs and set aside. Melt the margarine in a large skillet. Add the garlic, thyme leaves, mushrooms, and zucchini; cook over medium-high heat for about 5 minutes, stirring occasionally. Add the cooked meatballs; cover and simmer, stirring occasionally, until the vegetables are tender, about 10 minutes. Sprinkle with the salt and cheese. Add the tomato wedges, cover and heat for 2 to 3 minutes.

500g Veal Mince
500g Beef Mince
1 Egg
200g Breadcrumbs
150g Parmigiano
80g Spinach
Salt and Pepper

Bratwurst Meatballs with Smoked cheddar cheese sauce
1 lb loose bratwurst meat
1 lb other ground meat
1 ½ cups cauliflower rice
Preheat oven to 400. Spray 9x13 casserole dish with cooking spray. Mix ingredients thoroughly. Make into 1 ½ inch balls and place in casserole dish. Bake uncovered until balls are 165 degrees. About 30 minutes.
Cheese Sauce:
4 tbsp butter
1 cup heavy cream
4 cups shredded smoked cheddar cheese
¼ tsp xanthum gum
Salt
Pepper
Mix butter, cream, and cheese together in sauce pot. Stir and heat on medium heat until all ingredients are melted and combined. Sprinkle xanthum gum and mix in thoroughly until dissolved. Add salt and pepper to taste.
To serve, place meatballs in bowl and ladle cheese sauce on top.

Asian Meatball Harvest Soup
INGREDIENTS:
5-6 cups chicken broth
2 tbsp. light soy sauce
1/8 tsp. white pepper
salt to taste
1/2 cup sliced carrots
1 cups sliced cabbage
1 cup sliced snow peas
1 cup sliced yellow squash
ASIAN CHINESE CHICKEN MEATBALLS:
INGREDIENTS:
1 pound ground chicken
1 large egg white
1 tbsp. soy sauce
1 tbsp. cooking wine
1-2 chopped green onions
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. white pepper
1 clove minced garlic
1 tsp. minced ginger
1/2 tbsp. sesame oil
*Mix above ingredients in food processor. Refrigerate for 2-4 hours.
Form into quarter size balls.
Bake at 400 degrees Farenheit for 15-20 minutes or until done (depends on size).
In a pot add chicken broth, soy sauce and white pepper. Stir and taste for more
seasonings.
Add sliced carrots and cabbage. Bring up to a simmer and cook for 3 minutes.
Add snow peas and yellow squash. Bring back up to simmer and cook for 2 minutes.
Add in asian chicken meatballs, stir and cook for another minute or until
heated through.
Serve and enjoy.
