How To make Ham and Asparagus Pasta
3/4 lb Fresh asparagus spears or
- one 10-oz. pkg. frozen - asparagus 2 cn (14-1/2-oz.) stewed tomatoes
- cut up 1 tb Dried parsley flakes
1/2 ts Dried basil, crushed
1/2 ts Dried oregano, crushed
1/8 ts Ground red pepper (optional)
1 c Evaporated skim milk
10-oz. multicolored pasta
- such as wagon wheel or - corkscrew 6 oz Lean fully cooked ham, cut
- into bite-size strips 1 sm Red or green sweet pepper
- cut into strips Grated Parmesan cheese (opt) Snap off and discard the woody bases from the fresh asparagus, if using. Bias-slice the asparagus into 1-inch pieces. (Or thaw and drain the frozen asparagus.) FOR SAUCE, in a medium saucepan combine stewed tomatoes, parsley, basil, oregano, and ground red pepper, if desired. Bring to boiling. Simmer the sauce, uncovered, about 15 minutes or till reduced to 2-1/2 cups, stirring occasionally. Add the evaporated milk all at once, stirring constantly. Heat mixture through; do not boil. Meanwhile, prepare pasta according to package directions EXCEPT add the asparagus, ham and sweet pepper to the boiling water during the last 4 minutes of cooking time. Drain pasta and vegetables. To serve, place pasta mixture on a serving plater. Spoon the sauce over the pasta. Serve with Parmesa cheese, if desired. Serve at once. Makes 4 or 5 main-dish servings. Prosciutto & Asparagus Pasta Carbonara | D'Orsogna Recipe
Ingredients:
1 bunch asparagus, trimmed and quartered
1 tbsp. extra-virgin olive oil
Salt
Black pepper
12 oz. linguine or spaghetti
4 slices Prosciutto
2 large eggs, plus 2 egg yolks
¼ cup grated parmesan
Preparation:
1. On a large baking sheet, toss asparagus with oil and season with salt and pepper. Roast until tender and charred, 18 to 20 mins.
2. Meanwhile, in a large pot of salted boiling water, cook pasta until al dente. Drain, reserving 1 cup pasta water, and return to pot.
3. In a large skillet over medium heat, cut the prosciutto and cook it with oil for 5 mins.
4. In a small bowl, whisk together eggs, egg yolks and parmesan. Season generously with salt and pepper.
5. Combine cooked linguine and egg mixture and stir until coated. Add enough pasta water to make a loose, creamy sauce. Stir in roasted asparagus and prosciutto and serve.

Ingredients -
400g (14oz) - Spaghetti
1 Tbsp (20ml) - Olive Oil
1 1/2 Tbsp (21g) - Unsalted Butter
4 - Garlic Cloves, Thinly Sliced
1 - Whole Lemon, Zest Thinly Sliced
1/2 - Lemon, Juiced
1 Cup (250ml) - Thickened Cream
10g (0.35oz) - Curley or Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste
Notes -
This recipe is strong on lemon so adjust it to your taste. The first time I made it, I put way too much lemon juice in (I used 1 whole lemon) and it ruined the dish. I've now reduced it to half and I think it's the perfect balance. If you’re concerned, you can add the zest and cream and squeeze 1 quarter of a lemon into the sauce and adjust that way. Half a lemon works well though, so don’t worry.
