Ham Breakfast Casserole
Ingredients
• 24 oz. frozen hash browns -about 8 cups
• 16 oz. cubed ham
• 8 oz. sharp cheddar cheese -shredded
• 12 large eggs
• 1 cup milk
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• ½ bell pepper diced
• ½ onion diced
• 1 Tbsp minced garlic
Instructions
1. Preheat oven to 350 degrees.
2. Saute the bell pepper, onions and garlic until onions are soft
3. Add the frozen hash browns, ham, and cheese to a large bowl.
4. Add the sauted bell peppers, onion and garlic
5. Toss to combine.
6. Pour the mixture into a 9 x 13 inch baking dish that has been sprayed with cooking spray.
7. In a large bowl, whisk the eggs with the milk, salt, and pepper
8. Pour the egg mixture over the hash brown mixture.
9. Pat everything down with the back of a wooden spoon.
10. Bake for one hour, uncovered.
11. The center should be set and the edges should be golden brown.

Breakfast Egg, Ham and Hash Brown Casserole
12 large eggs
1 cup milk
1 teaspoon salt
½ teaspoon pepper
24 oz. frozen hash browns
16 oz. ham, diced
8 oz. cheddar cheese, (about 2 cups)
1 large green pepper, diced
1 small onion, diced
Preheat the oven to 350 degrees.
Spray 9x13 baking dish with cooking spray and set aside.
In a large bowl, whisk together the eggs, milk, salt and pepper and set aside. In a separate bowl, toss together the hash browns, ham, cheese, bell pepper and onion. Transfer the hash brown mixture to the prepared baking dish, pour the egg mixture over the top. The egg mixture should soak down into the dish. Make sure eggs and hash browns are evenly distributed in the pan.
Bake uncovered for 50-60 minutes until the center is set and the edges are brown.
I came across this recipe many years ago and it is great to prepare for a large gathering if you are serving brunch. The flavors are delicious. I have even prepared the night before and then baked the following day. I hope you would consider making it for your family.
