4 lb Flour
3 lb Butter
2 lb Sesame seeds;plus additional
-toasted seeds for sprinklng 1 tb Dry yeast dissolved in
-1/2 cup water 20 g Gum arabic; optional
1 tb Saffron stamens
1/2 lb Smen; seasoned butter
1 tb Cinnamon, ground
1 qt Vegetable oil
1 qt Vegetable oil; for frying
10 lb Honey
"This recipe is frankly for historical purposes as its yield indicates suitability for commercial or restaurant production rather than home baking. With unusual proportions of butter, oil and honey in the batter, yeast for rising and more oil for frying, making the cookies would be rather daunting were it not for the fact that they help glorify a particularly holy celebration." 1. In a food processor process all the ingredients,
except the honey, into a paste. 2. Take a walnut-sized piece of paste and roll it out
very thin. Using a metal cut-out typically found in Morocco, with different designs, cut out cookies and let them rise for 15 minutes. Deep-fry the cookies in the remaining quart of oil in batches over low heat just to brown. 3. Soak the cookies in the honey for 15 minutes.

Ingredients:
- 140 gr sesame
- 10 gr anise
- 10 gr vennel
- 200 gr almonds
- 300 gr butter
- 1,5 tsp cinnamon
- 1 gr arabic gom
- 1 package saffron
- 10 gr yeast
- 1 package baking powder (16 gr)
- 2 egg yokes
- 100 ml luke warm water
- 175 ml orange blossom
- 140 ml vinegar
- 1000 gr flour
Glaze
- 1 kg honey
- Sesame seeds
Mix all the ingredients together and add the flour bit by bit until it’s a firm dough.
Roll it into balls and leave them to rest for about 20 minutes.
Rol the dough out into a thin layer and cut the shebakia out. Shape it and let it sit on a baking tray until you finished all the dough.
Bake the shebakia goldbrown and dip them in the warm hunny. Garnish with sesame seeds.

Glazuur
- 1 kg honing
- Sesam zaden
Meng alle ingrediënten door elkaar en voeg beetje bij beetje de bloem toe tot het een stevig deeg is.
Rol er balletjes van en laat ze ongeveer 20 minuten rusten.
Rol het deeg uit tot een dunne laag en steek de shebakia eruit. Vorm het en laat het op een bakplaat rusten totdat je al het deeg hebt opgemaakt.
Bak de shebakia goudbruin en dip ze in de warme honing. Garneer met sesamzaadjes.

Moroccan Chebakia is a special recipe made in Ramadan and other special occasions. It is shaped as a flower, fried, and then coated with honey and sesame seeds. ????????
This recipe is a little time consuming, which is why most Moroccan women help each other make it together. This make the process much faster, but you can still do it by yourself too.????????????????????
My kids helped me make these sweets, so I was able to finish it more quickly. ????????????
It is very tasty! My family and I love it sooo much.

Ingredients:
- 6 cups of white flour
- Half a cup of sesame seed
- Half a cup of almonds
- 1 spoon of fennel
- Half a spoon of cinnamon
- Half a spoon of suger
- A little bit of salt
- Saffron or turmeric
- A small spoon of baking powder
- Half a cup of vegetable oil
- Half a cup of olive oil
- Half a cup of blossom water
- Water (as needed)

Chebakia - marokkanisches Honiggebäck mit Sesam / Chebakia - Moroccan honey pastry with sesame
Chebakia/Moroccan mKharka/Eid special
Chebakia, a traditional Moroccan favourite sesame cookie is shaped into a flower, fried and coated with pure honey (I used sugar syrup here.) It's also known as mKharka and served during Ramadan and special occasions. It's time consuming though worth the effort.
Even a misshapen cookie will taste delicious when finished! sesame, cinnamon, saffron, anise and orange flower water all contribute to the delicious sticky-sweet flavor of these flower-shaped cookies.
Chebakia /Moroccan mKharka
Ingredients
Dry mix
2 cups wheat flour
1 cup sesame seeds
Roasted and powdered
1 tsp baking powder
1/2 tsp salt
1 tsp fennel powder
1 tsp cinnamon powder
1/2 tsp turmeric powder
Wet mix
2 eggs
1 tsp olive oil
1 tsp yeast powder mixed with warm water
1 tsp apple cider vinegar
1 tsp orange blossom water
Pinch of saffron soaked in water
Method
Roast sesame seeds until fragrant. Cool and powder. Mix with wheat flour and all above dry ingredients mentioned under dry mix. Combine well. Combine all wet ingredients mentioned under wet mix and beat until frothy. Gradually add the wet mix into the dry mix and Knead until clay like dough consistency achieved. Knead and roll on a clean surface. Divide into 4 equal portions. Roll out each portion in a thin cardboard thickness. Cut into rectangle shape.. And further divide into medium rectangles equal sized. Make 4 incisions into each rectangle without cutting fully through. Insert the first, third and the fifth strip in the middle finger and carefully twist to form a flower shape and carefully seal both ends. Make upto 15 to 20 flowers out of the complete dough and allow to rest for 30 min before frying. Meanwhile prepare sugar syrup with 1 cup sugar and 1 tsp of orange blossom water. Fry the flower shaped chebakia until golden brown and dip them in sugar syrup for upto a min and remove. Sprinkle with sesame seeds and cool and store in air tight jars for upto a month. Enjoy the Ramadan festive delight....

Moroccan Sweet Chebakia Process and Preparation
Halwa Chebakia (sometimes spelled chebbakia or shebakia) is a Moroccan sesame cookie which is shaped into a flower, fried and then coated with honey. Also known as mkharka, it's usually served during Ramadan and for special occasions.
Chebakia is time-consuming to make. Most Moroccan women enlist the help of a sister, mother or friend for the preparation of a large quantity.
This is my sister-in-law's recipe. I've reduced her normal quantities by half to make the batch more manageable for those that cooking alone.
