How To make Guess Again Carrot Casserole
2 lb Carrots, cooked and mashed
8 oz Sharp cheddar cheese
1/2 ts Salt
1/8 ts Pepper
2 tb Butter
1 Onion, medium, grated
-Green pepper is optional -Bread crumbs with butter an You can't put your finger on the taste right away, hence, the name. Add cheese , salt and pepper, & butter to mashed carrots. Place in a 1 qt. buttered baking dish. Sprinkle with bread crumbs and dot with the additional butter. Sprinkle with parsley flakes. Bake @ 350 for 40 min. Lisa/Cedar Rapids

Boiled Carrots & Carrot Tops
Ingredients
1 bunch carrots with tops attached
1 cup water
Sea salt
Olive oil or butter of your choice
Remove the carrot tops from the carrot roots. Slice the carrot roots. Place them in a saucepan and add 1 cup of water. Finely chop the carrot tops. Bring the carrot roots and water to a boil, then reduce the heat to simmer on low, covered, for 5 minutes. Add the carrot tops, cover again and cook for another few minutes. Drain the water from the vegetables. Drizzle with a little olive oil or add a touch of your favorite butter (regular or plant-based). Sprinkle with a little sea salt. Enjoy!

**CARROT CASSEROLE RECIPE**
Ingredients:
1 bag carrots
1/2 yellow onion
8-10 oz shredded cheddar cheese
1/2 cup seasoned breadcrumbs
about 1/2 stick butter
1. Preheat oven to 375
2. Slice carrots and add to casserole dish that is sprayed with non stick cooking spray
3. Dice onion and add to dish
4. Add cheese and breadcrumbs to dish and mix all together
5. Dot with butter across top
6. Cook for about 1 hour or until carrots are fork tender. Check after 40 minutes and cover for remaining time if needed.
