How To make Grilled Shrimp Wrapped In Bacon
20 Med shrimp; cleaned deveined
10 Strips bacon; raw, cut in ha
3 Red or yellow sweet peppers;
4 tb Extra-virgin olive oil
2 tb Balsamic vinegar
1 tb Pommery mustard
Sprig fresh thyme 1 Head radicchio
1 Head endive
1 Head Bibb lettuce
Wash and dry the radicchio, endive and lettuce. Tear into bite-size pieces and set aside. Wrap each shrimp tightly in 1/2 strip of bacon. Grill in skillet or over charcoal grill until crisp, 3-5 minutes, turning once. Cover to keep warm. Seed peppers and cut into thin julienne strips. Set aside. Combine oil, vinegar, mustard and thyme in a jar. Cover and shake well. Place greens and peppers in a bowl. Add shrimp. Toss gently with the vinaigrette. Serve in shallow bowls, arranging greens first, and 5 shrimp on top of the greens.

Grilled Bacon-Wrapped Shrimp Stuffed with Jalapeno | Gourmet Guru Grill
Today’s recipe is for Bacon-Wrapped Shrimp with Jalapeno on the Gourmet Guru Kamado Grill. We will start by butterflying the shrimp, adding a piece of jalapeno, wrapping in bacon and then grilling. We will finish this recipe with a drizzle of honey and some melted cheese!
Ingredients
• 1 lb large shrimp
• 1 lb bacon
• 1/3 cup Shredded Mexican cheese blend
• 3 jalapenos, julienned
• Heaven Made Products That’s Incredible seasoning (or your favorite)
• Heaven Made Products Amazing Blazing Cajun seasoning (optional)
• 3-4 tablespoons honey
Recipe Instructions
1. Remove 1 to 2” of the fatty end from each slice of bacon.
2. Precook bacon in the microwave for 2 minutes.
3. Butterfly the shrimp.
4. Add a sliver of jalapeno to the back of the butterfly cut on the shrimp, squeeze the shrimp sides together and then wrap with one piece a bacon. Repeat for all shrimp. Adding a toothpick helps to keep the bacon on the shrimp.
5. Season all sides of the bacon-wrapped shrimp with the seasoning.
6. Heat your grill to high.
7. Place the shrimp on the grill and cook for 3 minutes, then turn the shrimp over and cook another 3 minutes.
8. Drizzle the honey on the shrimp on one side and then sprinkle the cheese.
9. Cook for 1 to 2 minutes or until the shrimp is done and shrimp is melted.
10. Remove the shrimp from the grill, let cool for 10 minutes and serve.

Bacon Wrapped Grilled Shrimp Recipe | Grilled Bacon Wrapped In Shrimp on PK Grill
Grilled Shrimp Wrapped in Bacon and Stuffed with Crab and Cream Cheese

This recipe is for Bacon Wrapped Grilled Shrimp and it’s great for tailgating.
First you’ll need 2lbs of jumbo raw shrimp. I buy them froze, deveined, still with the shell. Thaw the shrimp in cool water and remove the shell leaving the tail still attached. Use a sharp knife to carefully butterfly each shrimp (this is easy with deveined shrimp because the cut has been started for you). Store the shrimp in a covered container in the refrigerator until ready to assemble.
The next step is to precook 2lbs of thin-cut bacon. I do this because the shrimp would overcook before the bacon browns. Arrange the bacon strips on a foil lined cooking sheet at 415⁰ for ten minutes in the oven. Precooking the bacon leaves it flexible enough to wrap around the shrimp. Be sure to drain the bacon on paper towels once it comes out of the oven.
While the bacon is cooling, mix the Bacon Wrapped Grilled Shrimp stuffing:
- 8oz Cream Cheese
- 4oz Lump Crab Meat
- 2 cloves Garlic minced
- 1 Tablespoon Green Onion thinly sliced
- 1 Tablespoon Sriracha Sauce
Combine this mixture and set aside or store in the refrigerator until ready to use.
Also it’s a good time to make the Sweet & Spicy Glaze.
Sweet N Spicy Apricot Glaze
- 1 cup Apricot Preserves
- ½ cup Rice Vinegar
- ½ cup Water
- 1 Tablespoon Chili Garlic Sauce
- 1 clove Garlic minced
- pinch of Salt
Reduce for 15 minutes or until the glaze thickens. Store the glaze in a jar until ready to use.
To assemble the shrimp, fill each one with a teaspoon of the cream cheese mixture and wrap a slice of bacon around the outside. They’re ready to cook immediately or store in the refrigerator overnight.
If I’m taking them to a tailgate, I’ll secure the bacon with a toothpick, place in an airtight container, and store in the refrigerator or a cooler on ice until ready to grill.
This recipe can be cooked on any type grill set up for indirect cooking. I’m firing up my PK 360 with hot coals spread out to each side which creates an indirect zone in the middle.
Also I’m using a couple of my chicken racks (wire cooling racks) to make transporting/maneuvering the shrimp easy on the grill. Spray the racks with a little vegetable cooking spray and arrange the shrimp on the racks. Place each one on the indirect zone of the grill and close the lid for 8 minutes.
It doesn’t take shrimp long to cook; just look for the color to change. Brush the Sweet & Spicy glaze over each shrimp and cook an additional 2 minutes.
Once the shrimp are fully cooked and the bacon is nice and brown, carefully remove the racks from the grill. Arrange the Bacon Wrapped Shrimp on a platter and serve with the remaining glaze for dipping. I guarantee you these won’t last long and this recipe is always at hit!
