How To make Grilled Prawns with Fresh Coriander
1 lb Prawns, fresh or frozen
MARINADE:
1 tb Light soy sauce
1 ts Rice wine or dry sherry
1 ts Sesame oil
SAUCE:
2 tb Fresh coriander; minced
2 ts White rice vinegar
1 ts Fresh ginger; finely chopped
PREHEAT THE brOILER. Peel the prawns and discard the shells. Using a small sharp knife, split the prawns partially and remove the fine digestive cord. Pat the prawns dry with paper towels. Mix the marinade and combine with the prawns and let sit for 10 minutes. Prepare the sauce ingredients and mix together and set aside. Lay the prawns on a baking tray big enough to fit under the broiler. Or alternatively, you could cook them on the barbecue, weather permitting. Cook the prawns 3 minutes on one side, turn and cook for 2 minutes on the other. Turn onto a serving platter and serve with the sauce.

Garlic Prawns!

Quick and easy, never fails to impress. And the secret ingredient that makes all the difference? A splash of white wine which adds an extra edge of flavour. Restaurant secret!

Lemon Coriander Prawns | Sanjeev Kapoor Khazana
Prawns marinated with freshly ground fresh coriander paste, cooked till perfection.
LEMON CORIANDER PRAWNS
Ingredients
Juice of 1 lemon
18-24 sprigs fresh coriander
8-12 jumbo prawns, shelled and deveined with tails intact
5-6 garlic cloves
1 inch ginger
3 tablespoons oil
Salt to taste
Crushed black peppercorns to taste
½ teaspoon lemon rind
1 tablespoon cornstarch
Method
1. Blend together garlic cloves, ginger, 15-20 coriander sprigs, lemon juice and 1 tablespoon oil to a fine paste.
2. Take prawns in a bowl and add salt, crushed peppercorns, lemon rind and prepared paste. Mix well and set aside to marinate for 30 minutes.
3. Heat remaining oil in a non-stick pan. Add the marinated prawns and toss on high heat. Add some water, mix well and cook for 2 minutes.
4. Dissolve cornstarch in some water to make a smooth slurry.
5. Chop remaining coriander sprigs.
6. Add slurry to the pan, mix well and let the sauce thicken. Add chopped coriander and mix well.
7. Add crushed peppercorns and mix well.
8. Serve hot.
Preparation Time: 30-40 minutes
Cooking Time: 10-12 minutes
