Mexican Spice Steak Recipe

A fantastic Mexican spice blend is rubbed into Strip steaks then grilled and Glazed with a Molasses-Chipotle Glaze. The steak is paired with a quick and easy corn dish inspired by a menu item at Mesa Grill in New York City.

Mexican Steak Recipe
Serves 4
Ingredients:
2-12oz Strip Steaks (or any good grilling steak)
1 tsp Ancho Chili Powder (Found in Spice section of Walmart or any grocery store)
1 tsp Cumin
1 tsp Paprika
1 tsp Salt
1/4 Cup Molasses
1/8 Cup Balsamic Vinegar
1/2 of a Chipotle Pepper in Adobo, minced (Found in Mexican section of Walmart or any grocery)
1 Tbls Dijon Mustard
Extra Virgin Olive Oil or Canola Oil
Directions:
Mix together spices and rub liberally on both sides of the steaks, set aside at room temperature
Then mix together Molasses, Balsamic, Chipotle Pepper, and Dijon in a small sauce pan, whisk together over low heat.
Preheat grill to high heat, lightly drizzle steak with extra virgin olive oil and place steaks on grill for 3-4 minutes, flip and brush with molasses glaze.
Continue to flip and glaze both sides and cook until desired doneness. About 8 minutes total will be medium with thick steaks like these.
Chipotle Cream Corn Recipe
Serves 4
Ingredients:
4 Ears of Corn
1/4 Cup Mayonnaise
Half of Chipotle Pepper, minced
1/2 Cup Queso Fresco Cheese
2 Tbls Cilantro, chopped
3/4 tsp Salt (or to taste)
Directions:
Preheat oven to 350 degrees
Cut the tops off of the corn, then place directly on oven rack for 30 minutes
Once corn has cooled remove husks and cut off kernels (see video for tips)
Combine corn, mayo, chipotle, cheese, cilantro, and salt together
Place all ingredients in a skillet over medium heat, just to heat through, and enjoy!

these are the numbers i used to get to my estimate per portion, and i got the chicken from Sam's club so they may not be as cheap for you even if the price of the chicken were double @ over 7 dollars a lb, each serving would be a whopping $1.67:
Chicken $3.68 per 2.2 kg /2 = 180 /5= 36c
Cous cous $799 per 751 g /5 = 10c
Super grains $429 per 445 /5 = 5c
Btb $599 per 227 g less than a penny so 1c
Raisins $319 per 340 g /5 = 17c
Almonds $349 per 113 g /5 = 11c
spices (this is not easy to calculate, the bay leaves and cinnamon are considered staple pantry items, but the moroccan spice mix is a special buy. however, i used only a fraction of the 4 spice mixes that i bought at 29.99 if we divide by 4, then say i used a quarter of that we are looking at 37c per portion and this is a very generous estimate indeed, but should account fro any other negliable and staple items.
Saffron $8.95 per g let's say i used a tenth /5 = 17c (easily the least cost efficient! and why turmeric is a good substitute, but doesn't come close to beating saffron for taste.
this makes each serving = $1.34! and this is with rounding up!
