How To make Grilled Mahi Mahi with Pineapple
Gingered Pineapple Marinade 1 1/4 pounds mahi mahi fillet
1/2:
3/4 thick
4 slices fresh pineapple 3/4" thick
**************************************** Gingered Pineapple Marinade: 1 1/2 cups unsweetened pineapple juice
1/4 cup reduced sodium soy sauce
3 Tablespoons packed brown sugar
1 Tablespoon sesame oil
2 teaspoons grated ginger root
1 1/2 teaspoons finely chopped garlic
1/2 teaspoon crushed red pepper
4 medium green onions :
chopped (1/4 cup)
Prepare Gingered Pineapple Marinade by mixing all ingredients. Remove 1 cup of the marinade; cover and refrigerate remaining marinade for basting. Cut fish into 4 serving pieces. Place fish in shallow glass or plastic dish. Pour 1 cup marinade over fish. Cover and refrigerate, turning once, at least 2 hours but no longer than 12 hours.
Generously spray grill rack with nonstick cooking spray before heating grill. Heat coals or gass grill. Remove fish from marinade; discard marinade.
Cover and grill fish and pineapple about 4 inches from medium heat 8 to 12 minutes, brushing frequently with reserved marinade and turning once, until fish flakes easily with fork. If pineapple becomes too brown, remove from grill.) Discard any remaining basting marinade.
Makes 4 servings.

Recipe:
1 Single Mahi Mahi filet fresh or frozen
1-2 TBS blackend seasoning mix
1 cup FRESH large chunked pineapple
1 small sweet vidalia onion
1 small granny smith apple quartered
1tsp orange juice or lime juice fresh squeezed
1 tsp honey or agave for topping
1-2 hand fulls of fresh broccoli (add seasoning of choice)
Step #1:
Place about 2 cups of water into base of Smart Multi cooker.
Take large shielded colander and place filet in the center, sprinkle blackened seasoning over top.
in shallow colander place broccoli florets, add desired seasoning.
place in microwave with shielded top and cook for 7-8 mins (depending your microwave it should be juicy, tender & flaky)
fish will be so juicy and tender!
Step #2:
While the fish and broccoli are cooking, use your chef series 8 skillet ( or micro pro grill and do this ahead) and pre heat pan, sear the pineapple chunks until browned on each side. add in the OJ to deglaze pan.
Remove from pan and place in power chef.
next thinly slice onions on your mandolin or using your chef series knife and saute until caramelized & golden brown.
once done add the apple, & onions with the pineapple in the Power Chef and chop until chunky.
Once the fish & broccoli are finished, remove fish tops with the salsa and lightly drizzle honey over top the salsa and fish.
