How To make Grilled Jumbo Shrimp with Citrus Sauce

MARINADE:
1/2 c Vegetable oil
Grated zest of 1 orange Grated zest of 1 lime 1 tb Fresh basil; minced OR
1/2 tb Dried basil
1 ts Fresh thyme; minced OR
1/2 ts Dried
1 lb Extra-large shrimp; about 18
-shells removed; cleaned
VEGETABLE SAUTE:
1 tb Vegetable oil
3 c Vegetable; (use artichokes,
-fennel, red bell pepper, -and zucchini) cut into -1/2-inch-wide sticks about -2 inches long 1 Clove garlic; minced
Salt and ground black pepper 3 tb Balsamic vinegar
CItrUS SAUCE:
1 tb Orange juice
1 tb Grapefruit juice
1 tb Lime juice
2 tb Honey
1 tb Dijon-style mustard
For the marinade, combine all the ingredients in a mixing bowl. Add the shrimp and marinate for about 3 hours. (Note the recipe states to marinate at room temperature, but I would not leave it out for that amount of time. The safest thing to do is to marinate in the refrigerator.) When the marinating time is over, make the vegetable saute. In a saute pan over medium heat, warm the oil. Add the vegetables and garlic; saute for 4 minutes, stirring constantly. Season with salt and pepper. Add the balsamic vinegar and continue cooking for 1 minute more. To make the citrus vinaigrette, combine all the ingredients in a mixing bowl. Whisk to dissolve the honey. Remove the shrimp from the marinade and grill or broil for 2 minutes on each side. Divide the sauteed vegetables among 6 salad plates, put 3 shrimp on top of each, and pour on the citrus vinaigrette. Source: Burt Wolf's Table Cookbook. Shared and MM by Judi M. 2 lbs. (907 g) Freshwater Prawns (or large head-less shrimp)
2 Tablespoons (30 ml) Grapeseed oil (or other high-flash point oil)
1/2 cup (1 stick or 115g) unsalted Butter
6 cloves Garlic , crushed
1 chopped or crushed thai chili , optional for spicy version
2 teaspoons (5 ml) Fish Sauce , or soy sauce
1 teaspoons (5 ml) citrus zest of 1 medium lemon , or 1 lime
1 Tablespoon fresh lemon or lime juice
1/2 teaspoon salt , or to taste
1/4 teaspoon fresh cracked black pepper , or to taste

This succulent Garlic Butter Shrimp is perfect as an appetizer or as a full meal! It’s also extremely quick and easy to make and ready in less than 20 minutes. The shrimp are lovingly pan-fried in an amazing garlicky butter, with a hint of heat from red pepper flakes.

I love this shrimp scampi pasta recipe! Buttery, zesty and so satisfying… If you want to add more lemon wine butter and garlic to this recipe I certainly won’t stop you!
I love using spaghetti but if you want to sub in your favorite pasta to make linguini shrimp scampi for example then go ahead! If you’d like to try making your own pasta from scratch
ABOUT THE SHRIMP
I bought some super-fresh jumbo shrimp to make this dish and they made all the difference! Don’t use frozen precooked shrimp to make this recipe, the taste and texture will be subpar.
Cleaning, or deveining shrimp can seem a bit intimidating so I wanted to go over the process.
Start by removing the shell. You can peel it off from the bottom where the little swimmeretes are.
Once the shell is removed use a small knife to make a roughly 1/4″ deep cut down the top of the shrimp.
Now you should be able to see a small vein which you can pull out using your fingers.
That’s it! If you’re having difficulty you can cut a bit deeper and use a knife to help remove the “vein” which is actually the shrimp’s digestive tract.
