How To make Grilled Game Sausage with Wilted Greens
1 pound Magret of duck with fat
1/2 pound pork butt
1/4 pound Pancetta
1 teaspoon cumin seeds
1 teaspoon cinnamon
1 teaspoon salt
1/4 pound caul fat available at specialty butcher
shop 4 tablespoons extra virgin olive oil
2 cloves garlic
thinly sliced
2 cups kale (bitter escarole) :
cut in 1/2" ribbons
Salt and freshly ground pepper to taste 2 bottles balsamic vinegar, reduced to 20 percent :
to syrup
Preheat the broiler or grill
Cut the duck, pork butt and Pancetta into 1/4-inch cubes. Run the meat through a grinder. The mixture should be quite rough.
In a large mixing bowl, combine the ground meat with the cinnamon, cumin and salt. Mix very well. Divide the mixture into 8 equal oval patties, about 1/2-inch thick. Wrap each patty in caul fat. Place the patties under the broiler or on the grill and cook through, about 4 to 5 minutes per side. Set aside.
In a large 12- to 14-inch saute pan, heat the olive oil until just smoking. Add the garlic and saute until very light brown, about 2 minutes. Toss in the kale and saute, stirring quickly, about 2 to 3 minutes, until just wilted but not too soft. Remove from the heat and season with salt and pepper.
Divide the mixture equally on 4 plates and serve.

WHITE BEAN SOUP WITH SAUSAGE AND KALE AND PARMESAN CRUSTED GRILLED CHEESE SANDWICH
Serves 6-8

INGREDIENTS:
2 tbsp (30ml) olive oil, separated
1 ½ cup (225g) onion, chopped
½ cup (75g) celery, diced
salt and pepper to taste
2 (15-oz) cans of cannellini beans (844g) drained and rinsed
4 cups (950ml) chicken broth, NOT low sodium
5 sprigs fresh rosemary
4 Sweet Italian Sausage Links, casings removed
2 large leaves of kale, steams removed, leaves roughly chopped
¼ cup (22g) freshly grated parmesan
4 slices sourdough bread
4 slices provolone cheese
2 tbsp (30ml) butter, melted
METHOD:
In a large Dutch oven heat 1 tbsp (15ml) of the olive oil. Then add the onion and the celery and cook on medium heat until they are fragrant and tender.
Add the beans and the broth and the 5 rosemary sprigs. Simmer covered for 10 minutes.
Meanwhile, heat a large non-stick skillet add 1 tbsp of olive oil. Cook the sausage and break it into bite sized chucks. Allowing it to brown on all sides and cook through. Remove sausage with a slotted spoon and transfer to a plate lined with paper towel.
Transfer the soup to a blender and puree until smooth. Transfer back to a cleaned out Dutch oven and keep warm on a low flame.
Season soup to taste with salt and pepper. Add sausage and kale. Stir until sausage is warmed through and kale is wilted. Keep warm on a low flame while you grill the sandwiches.
Heat a large non-stick skillet or grilled. Spay lightly with cooking spray.
Brush one side of each slice of bread, with butter. The top with freshly grated parmesan cheese, pat the cheese down and press into bread so it sticks a bit.
Place cheesy side of bread on griddle, add 2 slices of provolone cheese, top with second slice of cheesy bread. Parmesan cheese side up.
Grill on each side until parmesan is set and toasted and cheese inside the sandwich has milted. Remove from grill and slice sandwich in half on the diagonal.
Serve with the soup!

Southern Fried Cabbage With Sausage and Bacon!
Southern Fried Cabbage Ingredients
- 1 small head of cabbage, shredded
- 1 pound of smoked sausage (kielbasa or andouille work well), sliced into rounds
- 4-6 slices of bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (adjust to your spice preference)
- black pepper to taste
- 2 tablespoons butter
- 1 Packet of Sazon Seasoning
-Onion Powder and Garlic Powder (adjust to your perference)
- 1 tablespoon of worchestire sauce
-1 teaspoon sugar
**Instructions:**
1. Add the sliced sausage rounds to the same pan with the bacon grease. Sauté the sausage until it starts to brown and become slightly crispy, about 5-7 minutes. Remove the sausage from the pan and set it aside.
2. In the same skillet or frying pan over medium heat, cook the chopped bacon until it becomes crispy. Remove the bacon from the pan and set it aside on a paper towel-lined plate to drain. Leave the bacon grease in the pan
3. In the same pan, chopped onion, and minced garlic. Sauté for about 2-3 minutes until the onions become translucent and fragrant.
4. Add the shredded cabbage to the pan and stir to combine with the onions and garlic. Cook for about 10-15 minutes, stirring occasionally, until the cabbage has softened and started to caramelize. You can put a lid on the pan to help the cabbage wilt faster.
5. Season the cabbage with paprika, red pepper flakes, sazon, and black pepper. Adjust the seasoning to your taste preferences.
6. Return the cooked bacon and sausage to the pan with the cabbage mixture. Stir everything together and let it cook for an additional 5 minutes to heat the sausage and bacon through.
7. Taste the dish and adjust the seasoning if necessary. If you like it spicier, you can add more red pepper flakes at this point.
8. Serve the delicious fried cabbage with sausage and bacon hot, garnished with chopped fresh parsley if desired.

Spinach 400g.
1 tsp dried spring onions or 1 tbsp fresh spring onions.
