Steak Fajitas
1-2 Lb Skirt Steak
1 Green Bell Pepper (thinly sliced)
1 Yellow Bell Pepper (thinly sliced)
1 Red Bell Pepper (thinly sliced)
2 Medium Onions (thinly sliced)
2 Roma Tomatoes (diced into 1 inch pieces)
1/2 Shallot (minced)
2 Garlic Cloves
2 Tbsp Chili Powder
1 tsp Cumin Powder
1 Tbsp Paprika
1/2 Tbsp Oregano
Avocado Oil
Limes
Salt and Pepper
Accoutrements:
Flour or Corn Tortillas
Shredded Lettuce
Guacamole
Sour Cream
Cilantro
Cotija Cheese
Lime Wedges
Instructions:
In a large bowl add the skirt steak, 2 Tbsp of avocado oil, 1/2 of the minced garlic, minced shallot, 1 Tbsp of chili powder, 1/2 tsp of cumin, oregano, paprika, the juice of 1/2 a lime, salt and pepper. Marinade the steak for 1-2 hours or up to overnight.
In a large cast iron skillet on medium high heat, add 1-2 Tbsp of avocado oil. Sear and cook the steak for 1-2 minutes a side or until the internal temperature is 130 degrees Fahrenheit. Let the steak rest for 10 minutes then slice thin against the grain.
While the steak rests, in the same cast iron pan add the onions, a pinch of salt, and more avocado oil if needed. Caramelize the onions slightly then add the bell peppers. Sauté until softened then add the tomatoes and remaining garlic. Once the garlic is fragrant (about 1 minute) add the remaining chili powder and cumin. Season to taste with salt and pepper then add the steak back to the pan. Toss together and once the veggies are cooked to your liking, serve hot with the assortment of accoutrements.

Grilled Carne Asada Steak Fajitas Recipe with Homemade Tortillas
Carne Asada Fajitas and Flour Tortillas: roasted beef or also known as carne asada is delicious marinated and grilled meat that is sliced and served up, and in this case with homemade tortilla.
Out of the several hundred recipes on my site, I can’t believe I’ve never made carne asada? Crazy I know! Well it’s been long enough, so when I was shopping at the grocery store and walked past the meat aisle there was a beautiful flank steak that was winking at me telling me to marinate it and grill it up. Well, maybe it was more me than the steak haha. Regardless I’ve been dying to make a carne asada and turn them into steak fajitas and serve all this goodness up with some homemade tortillas and man oh man was it so absolutely delicious that I would seriously eat it every day for the rest of my life with no problem at all! Let’s hook it up!

Grilled carne asada steak fajitas recipe with homemade tortillas

Ingredients:
For the Carne Asada:
juice of 3 limes
4 finely minced garlic cloves
2 teaspoons of ground cumin
¼ cup of chopped fresh cilantro
1 seeded and finely minced fresh jalapeño
2 teaspoons of sugar
3 tablespoons of white vinegar
½ cup of olive oil
2 teaspoons of sea salt
1 to 2 pounds of flank steak
For the Homemade Tortillas:
4 cups of Bob’s Red Mill All Purpose Flour
½ tablespoon of sea salt
½ tablespoon of baking powder
½ cup of canola oil or lard
1 1/3 cup of warm water
Instructions
1. Carne Asada: Add all ingredients to a plastic bag and mix until completely combined. Marinate at least for 2 hours or best overnight.
2. Remove from the marinade and cook on a very hot grill, 450° to 550° for 4 to 5 minutes per side for a rare to medium-rare internal temperature. Slice against the grain and serve with assorted toppings.
3. Homemade Tortillas: Add the flour, salt and baking powder to a standing mixer with the paddle attachment on medium-low speed and add in the oil and water and knead for 1 minute.
4. Transfer to a clean surface and divide into 20 individual balls.
5. Roll each ball out until it is about 8” to 9” in diameter.
6. Cook each tortilla on a hot griddle or large frying pan on high heat for 20 to 30 seconds per side or until they are cooked and lightly browned. Keep warm in a towel.
7. Serve with the carne asada and toppings.

Ingredients:
2 Chicken Breasts
3 Bell Peppers, any color
1 yellow onion, sliced
2 Fajita seasoning packets (taco seasoning will also work)
2 Flour Tortillas
Salsa
How to make it
1. Add chicken breasts and 1 packet of seasoning to a bowl, let marinade for 8 hours or overnight.
2. When you are ready to start cooking set grill to 350 degrees and remove chicken from fridge. Add griddle plate to one side of the grill and oil well.
3. Slice and deseed bell peppers. Add onions and peppers to a bowl and add 1 packet of fajita seasoning.
4. Once grill is hot place chicken directly on the grill grates and the pepper mixture on the griddle attachment. Cook until chicken reaches an internal temperature of 165, about 6 minutes on each side. Be sure to stir the peppers and onions and remove once cooked, about 8 minutes.
5. Remove chicken when cooked through and let rest for 5 minutes.
6. With the grill still warm, place flour tortillas directly on the grill grates. Cook for 15 seconds on each side until warm.
7. Slice chicken and assemble your fajita. Add salsa and any additional condiments you’d like. Serve immediately and enjoy!
