Grilled Chicken with Mango Salsa
A fresh, vibrant salsa is the perfect match for grilled chicken, and together they make an easy dinner for the Spring/ Summer barbecue season. Use as much or as little chilli as you like. You can also roast the chicken breasts if you don’t have a barbecue. Click the link for the full recipe:

Grilled Chicken with Strawberry Chili Salsa
1 Fresh Lime, zested and juiced
2 tsp Garlic
2 tsp Olive Oil, divided
1 tsp Salt
1/4 tsp Black Pepper
2 C Strawberries, Diced
1 C Pineapple, diced
1/4 C Red Onion, Minced
2 tsp Jalapeno, seeded and minced
2 tsp Basil or Cilantro
2 tsp Sugar
1 lb. Chicken Breast
4T Balsamic Glaze
1. Zest Lime, set aside, Juice Lime, set aside
2. In a medium bowl, combine 1T Lime Juice, garlic, 1/2 tsp oil, salt and pepper. Add chicken to bowl , turn to coat both sides and set aside.
3. In a medium bowl combine strawberries, pineapple, onion, cilantro, jalapeno, sugar, remaining lime juice, 1/2 tsp Oil and reserved lime zest. Mix well.
4. Lightly coat a grill rack with non-stick cooking spray. Heat grill pan to medium high.
5. Grill Chicken, flipping once, until an instant read thermometer inserted in the thickest portion reads 165F. Serve chicken with Salsa on top. Drizzle with Balsamic Glaze, 1T per serving.
